I will only use Aluminum for even heating. SS is not an even conductor of heat. My mother used burning coal as dhum and placed them on the top of the lid. The burning wood fire was put off.

Some people saying non stick pans are not advisable to use. It has a plastic coating which will melt at high temperature. Yes I agree with you. But it will happen at 348⁰C. Our domestic burners doesn't have that much range. We can use it in our homes. But we should replace it atleast once in 5 years. And we should use only wooden spoons to stir or toss. Highly expirenced ones will use steel spoons with their kind of techniques, which won't affect the pan.

Baby jackfruit is an excellent mock meat option. We call it palaa musuru. Unfortunately wenever i tried the jackfruit turned out too much soft n mushy. Hope i get it right henceforth. 🙏
