Well I just watched him camp in a CULVERT !!! NOT a clever action, and a lot of his actions in that video were far from using any wisdom. I'd not be hanging my hope or trust in this fella. He has a whole heap self esteem but it seems really misplaced to me. Esp compared to many of the other guys who are adventurers in the cold weather of ALASKA, CANADA, & NORTHER States of USA. Too many things he didn't get right in that video that could have been a serious negative. Really not sure how all those applauding him have actually experienced life of more than 20-30 yrs or ever been outside the city or suburbs. So I'm def NOT recommending him to anyone inexperienced to follow him.

Just a nerd-fact about the french fries... I used to do summer jobs at a crisp factory. When the potatoes arrived, the did a little lab test on them to check the sugar content. The ones that had a higher sugar content were the ones that would turn brown quicker, so they used those for the paprika crisps. With the paprika powder on them, you could not see that they were a bit more brownish. The ones with lower sugar content were used for salted crisps, because they looked more golden. So, sometimes your potato chips might look like they're baked too much, but that could be because of the sugar-content. 🙂

You could also use the engine compartment for a winter refrigeration/freezer storage space. Just cut a tin/aluminum box with lockable lid and no critters can get in.. a bear would have a hard time ripping into metal even. Plus you could make an inside small door to retrieve quick small goodies. And inside door/area would be somewhat warmer so that could be the fridge part. Would make for a nice completion for the driver area/kitchen you mentioned on building. And in summer it could hold things you don't want mice to get to, so you don't have to lug it all back out

for the leaky front door gasket stuff - and for that matter retaining heat when doing entry/exit to do your regular excursion stuff - you could probably get good value for putting up old blankets and such as a curtain against the gap behind that front entry area. Can store it onsite in a plastic tub if a recurring thing - that way mice can't get into it. If you have an old cheap pot - leave that on the stove when burning but not cooking - just to have dishwater handy. For the Framing etc - If you are going to take the existing roof OFF - beware the walls may not support much weight of true a-frame. building something OVER the vehicle - a lean-to style of a covering a-frame may work. And/or you can do interior framing to reinforce the metal walls instead of building exterior.

Have you thought of getting a couple old moving blankets and using them as curtains at the doors for insulation at night? it might keep the drafts down and I've seen them at thrift stores for about 4 bucks a piece. a bit of airline cable on hooks mounted to the walls and you could thread it thru grommets in the top of the curtains and you could open them and close them in the winter. you'd have to pull them/bring them for each winter camping session but it's a thought. you could probably also do clip curtain rings on wool blankets and the wires but the quilting on moving blankets might be warmer.

Just a tip, if you ever will be camping in the same situation again: You may hang a blanket or something inbetween the cab and living quarters of the truck. It will reduce the room size you have to heat, making it somewhat warmer. Of course you still have all the metal sides of the truck dissipating heat, so putting on some insulation should definitely help. If you ever want to do that, there is actually stick-on foam insulation for self-build campers/RVs, at least in Europe. Could just stick it to the big panels and see some improvement already, without building any contraptions. A problem I see with that is the cost of such insulation (and looks of course). Just researched it. Here, a square meter costs around 9-25€ (depending on the thickness), so that might be a turn off :(
