洋蔥豆腐蝦滑煲
材料:
急凍蝦仁170克
洋蔥1個
豆腐2磚
辣椒仔1隻
蔥1條
處理:
1. 蝦仁,連包裝袋,清水解凍,清水沖洗乾淨,擎乾水。
2. 豆腐,清水沖洗乾淨,廚紙索乾,1開6,放碟上。
3. 蝦仁,廚紙索乾,用菜刀拍一拍,放碗內,加入調味料:
a. 生粉1湯匙
b. 油半湯匙
c. 蠔油半湯匙
d. 胡椒粉適量
攪勻。
4. 豆腐,再用廚紙索乾,在上面用小刀輕手劃交叉,塗上少許生粉。
5. 蝦膠,放在豆腐上,壓實。
6. 洋蔥,1開8,去皮,清水洗乾淨,搣開一塊塊。
7. 蔥,清水洗乾淨,切粒,放碟上。
辣椒仔,清水洗乾淨,切粒,放同一隻碟上。
烹調:
1. 大火在鑊內燒熱油3湯匙。
2. 轉中慢火,放豆腐落鑊,蝦膠向下,排好,轉中火繼續煎。
3. 豆腐,大約煎了1分半鐘,蝦膠煎至金黃色,反轉,轉大火繼續煎。
4. 另一邊,預備好煲仔。
5. 慢火,放洋蔥在煲仔內。
6. 預備芡汁:
a. 生粉半湯匙
b. 生抽半湯匙
c. 蠔油半湯匙
d. 胡椒粉適量
e. 糖1茶匙
加入清水300毫升,攪勻。
7. 豆腐已煎至金黃色,放好在煲仔內,轉大火,加入芡汁,大火滾起。
8. 灑上蔥粒及辣椒粒。
9. 完成,可享用。
Tofu and onion claypot with shrimp paste
Ingredients:
Frozen shrimps 170g
Onion 1 No.
Tofu 2 cubes
Chili 1 No.
Green onion 1 No.
Preparation:
1. Shrimps, defrost in tap water with plastics. Rinse thoroughly. Drain.
2. Tofu, rinse with tap water. Dry with kitchen towels. Divide each into 6 shares. Put on plate.
3. Shrimps, dry with kitchen towels. Beat well with chopper. Put in a bowl. Add seasoning:
a. Tapioca starch 1 tbsp
b. Oil 0.5 tbsp
c. Oyster sauce 0.5 tbsp
d. Pepper appropriate amount
Mix well.
4. Tofu, dry with kitchen towels again. Lightly make a cross with a knife on it. Put little tapioca starch on top.
5. Shrimp paste, put on top of tofu. Press well.
6. Onion, divide it into 8 shares. Get it peeled. Rinse with tap water. Separate it slice by slice.
7. Green onion, rinse with tap water. Get it diced. Put on plate.
Chili, rinse with tap water. Dice in cubes. Put on the plate.
Steps:
1. Heat up 3 tbsp of oil at high flame in wok.
2. Turn to medium~low flame, put tofu in wok. Shrimp paste faces down. Put in rows. Turn to medium flame and continue frying.
3. Tofu, has been fried for 1.5 minutes. Shrimp paste has been turned into golden yellow. Flip over. Turn to high flame and continue frying.
4. On the other side, get ready for a pot.
5. Low flame, put onion in the pot.
6. Prepare sauce:
a. Tapioca starch 0.5 tbsp
b. Light soya sauce 0.5 tbsp
c. Oyster sauce 0.5 tbsp
d. Pepper appropriate amount
e. Sugar 1 tsp
Add in 300ml of water. Mix well.
7. Tofu has been fried into golden yellow, put into pot. Turn to high flame. Add in the sauce and heat up at high flame.
8. Put green onion and chili cubes on top.
9. Complete. Serve.
Tonight will be cool. Just make a claypot. I am sure you will feel warm after you have had the pot
