You are so on point about the fries. Funny (if you say the taste is like a fry, you haven't had a fry in a while). I agree with your fry evaluation. And kudos to you for giving Fan the "shout-out". She is amazing as are you.

Congrats on your daughter and son joining the military to serve their country! I spent 20 years on active duty in the Air Force before retiring and going to law school. Best time in my life...they will love it. And congrats to you and you wife for being awesome parents and giving your kids such values. I just made the keto french fries with coconut flour for the Second time first time I use 3 tablespoons exanthem gum and it was so so sticky I couldn’t even complete the job. Yesterday I saw Tim talks and he only used 1 tablespoon of xanthan gum so I just did that and it worked brilliantly you definitely need to eat them while they’re still hot but I was impressed just like you said you know they’re not fries but they are a damn good replacement!! And he even talks about laying them single layer before you fry them and freeze them and put them in a baggie and just pop out a handful any Time to fry them up

I do like tiger nut flour. I only use it as a blend to stretch almond flour, since almonds are a bit upsetting to my gut if I get too much. I'll try it for faux fries.

I made these fries this weekend after watching her video. I wore vinyl gloves while mixing. They may not taste just like fries but they are crispy, crunchy, and with a dip, quite excellent. I played around using some seasoning in the mix as well, cajun seemed to work out pretty well.

I shocked my wife - I made your best bread chaffle, mixed some tuna fish, mayo, onion and cheese together. Put on top of the chaffle and put it under the broiler until the cheese starts to melt, could wait until it browns a bit if desired. She complemented me multiple times on how good it was. She then said I could think about adding a hard boiled egg into the mixture because that might jazz it up. Love your channel -

Heavenly Fan is one of my favorite sites. She is vegan and creats the best low carb recipes for vegans. I have not tried her fries yet because I don't use oils. I appreciate you giving her credit for the fries. Thanks Steve!!! If I like a recipe of yours I veganize it whenever possible.

A tortilla recipe I use has you use lots of xanthan gum, I use a sandwich bag to massage the dough. Its far better than using bare hands in my experience.

@@RoseLawrence765 I use this recipe www.gnom-gnom.com/grain-free-keto-tortillas/ But I cut the Xanthan Gum in half. I have made these probably 2 dozen times and they are just as good with half the xanthan gum and its much less noticeable.

@@RoseLawrence765 You're welcome Rose! Oh and just a tip, I also put some different seasonings in mine. So if you are worried about throwing off the stability of the recipe in any way, don't. I have put garlic powder, cumin, cayenne, onion powder... So its super stable and easy to do. Have a great week

Those BBQ chicken kabobs were the bomb. I made mine in my air fryer, but, geesh, they were sooooo good! And, it's great that the rub made a lot, so it's readily available for the next time! Great job, Steve!

I'd watched Heavenly Fan's video when it popped up in my feed a few days ago. I love the fact she is vegan while also keto. I didn't think they could taste much like French fries. You and Headbangers Kitchen are my faves, but you both have been broadening my horizons with new to me KZbinr's content and I thank you guys for it. Wow....those keto fries were amazing!!! My daughter got all excited and made them for lunch today. With some sugar free G Hughes ketchup they were a huge hit with everyone in the family! We'll have to make a keto glaze to dip the coconut flour fries in!! They were a little more on the desserty side and not on a french fry side!

@@SeriousKeto that's what were doing with this next batch she's making lol dipping them in some sugar free syrup. Figuring out how to make them taste like french toast sticks without having to make keto bread. These were fast and used little ingredients.

Life is full of constant challenges. I have 2 grown sons one was in the Navy and one still is in the Air Force. BOTH branches helped my sons become even more responsible adults so in addition to what you and your wife have added to their standards they will blossom even more. KUDOS to you! Also, thank you for discussing Heavenly Fan's fries. I stumbled upon that You Tube while you were gone on your trip and thought they would be good to try. You saved my hands unless I decide to use plastic (throw away glove)! Fries are truly what I miss the most.

That’s so cool that someone recognized you!! Wanted to tell you that King Arthur has a new low carb “keto friendly” flour. It’s flour to be sure. I bought a bag, made a loaf of legit bread and did a glucose test. Had a decent slice of it toasted with butter and a fried egg. Quite tasty. My base glucose was 96 and at one hour was 111. At two hours I was at 107. Ketones actually went up .1. It’s dirty but I’m thinking for a thanksgiving treat, bread, pie or stuffing it might be ok.

Those keto French fries look amazing! And I would love to hear about your glucose-friendly recipes, even if they don't turn out the way you expected. (I love potatoes more than anything, so I still miss those. Cauliflower is a good stand-in sometimes, especially mashed, but yeah. That's the one food I consistently yearn for.) Lots of family changes, but all of them good so yay!

Happy you had a great trip, even if you feel off the wagon briefly. Reasonable is a term many people don't understand when it come to not only diet but life in general. Recently joined the community, you have been a tremendous inspiration and guide as I navigate a keto lifestyle. Hi Steve, I agree about Heavenly Fans fries, coconut flour better for a sweet alternative but the Almond flour with chicken salt is absolutely amazing. My Son stole my fries over his regular fries and said they are amazing!!! Glad you gave her credit! : )

So after watching Heavenly Fan and then watching your review, plus TIM? something (not sure of name) review with Lupin flour added, I decided to give it a go......but I did it cheat-o keto. I took 60g almond flour, 20g lupin flour, 10g coconut oil powder and shame shame 10g Idahoan potato mash flakes, 3 tsp xanthan gum and 8 tbs of hot water (but I think bone broth would be good). I fried 1/3 of it (12 fries) until crisp. I wanted to weep because of how tasty it was. It reminded me of Cavendish crispy fries-ish. Mine is a bit higher carbs but a cheat-o keto meal of fries for 10 carbs aint bad.

@@SeriousKeto .....you know, I was just thinking, this is kind of an answer. A while ago I left a comment on your podcast regarding a potential keto-fiable modification of the long fries. I was watching a video about street food in Taiwan and they did these really long fries using cooked cooled potatoes mixed with either regular, rice or corn flour. And they would use this press (like a potato ricer) to fry really long fries. So cool that Heavenly Fan stumbled upon this. I would call this a keto breakthrough.

That's exactly what I thought when I first saw Fan's video as well, that it looked like it'd work better as a churro than a fry. I think I might actually try them now that you've tested them out.

Wife and I just got back from a week in Puerto Vallarta and let me tell you, it is hard to remain keto in Mexico so I feel your pain. Their tortillas down there were amazing, especially on traditional breakfast quesadillas........

@@SeriousKeto if you don’t mind eating a lot of fish, you will be ok. The fish was better then what I can get here in the Seattle area and is fresh caught everyday. However, the homemade chips and tortillas are a killer. Pair that with the fresh pork and chicken and you were done for. BTW, not only do not drink the water but Mexican wine is pretty bad too.....

Bread is my weak spot I do it every once in a while and I believe sensible keto is more attainable then strict keto! Congrats on the kids I can only hope my girls follow my lead like that.

I went and watched the "fries" video by Heavenly Fan and I was wondering about using chicken broth instead of just plain water to add more flavor. What do you think?

I think there are lots of possibilities with these fries. The two places my mind was going were cheese fries (using some cheddar powder and nutritional yeast) and frying them in tallow (like McDonald's did back when I was a kid). I think your idea of chicken broth could be an interesting addition.

Hmmm, might test this out! I'm making mine with lupin flour and freshly grated parmesan cheese and they are SOOOOOO GOOOOOOD!!! The broth seems like it will only add to my enjoyment of these 'fries'. I've tried almond flour and coconut and now the lupin. Lupin is by far my favourite! Prior to obtaining this precious commodity, the almond flour was my preference.

One more thing, have you tried Carbquick yet? Might help you with making hotdog buns. I just used to make a roux for Gumbo and worked amazing. Makes great biscuits as well. Maybe not clean keto, but it's not like I'm using everyday.

I've used it and I don't feel that it would be the right texture for a hot dog bun. Like you, I've made some decent biscuits with it. I'll have to try it as a roux/thickener. That hadn't occurred to me. Thanks!

@@SeriousKeto After considering using for a roux, I found an amazing video by THE CAJUN KETO CHEF. As someone who grew up in Louisiana, I've been making regular gumbo for years. I made his keto gumbo recipe and might be the best gumbo I have ever made. Check it out. Also made the etoufee and it was amazing. Trying his jambalaya next. Hope this helps and gives you some great ideas. Those Cajuns know how to get a lot of flavor into a dish. Good Luck! GEAUX ARMY!

I have made the fries twice. Almond flour was my favorite. They were great with that yogurt dill dip you have used before. They are great and easy to make. BTW I got my keto mojo upgrade for free'ish (paid shipping, tax, and for 60 x2 strips). Very good company for doing that.

That french fry recipe came up in my suggested watch feed a few days ago. I watched it and can't wait to give it a try! I miss fries with tarter sauce. Best of luck to Courtney and Connor. I use Cacl2 for pickles and cheese making. But I just found out that I can ad it and baking soda together and get a similar effect making melty cheese.

It's fun someone recognized you from your channel. Well if I would see you somewhere I wouldn't know it would be you. When the kids were teenagers, we used to travel to Toronto to see the celebrities on the streets during the TIFF; I couldn't see anyone even when my DH pointed them at me (but the children did and took many pictures).

Hey, Steve. Thanks for the video. I subscribed to Heavenly Fan. I had not seen her channel before. I'm definitely gonna try the fries. My adult kid loves potatoes, and I believe that is her main obstacle to going low carb or keto. I'm wondering if a spoonful or so of mashed potato flakes, ground to a powder, would give them more potato flavor. It would add a few carbs, but I'm up for it if she will like them and not feel deprived. Will report back.

I was doing some research on potatoes this morning. Mashed potato flakes have the highest glycemic index of any that I saw. I'd personally steer clear of those.

The great thing is once you dip them in a condiment, you forget that they're not potatoes. That said, the next time I'm do them, I'm going to fry them in tallow. See if that bring back memories of McDonald's fries before they moved to cooking in trans fats.

On the rare occasion I make cauliflower mac and cheese. I use my sodium citrate to make a shells and cheese type sauce that the nephews will eat better.

I just watched the Fry video. Thanks Steve for being willing to share links. That looks easy! They look good! I did a hamburger run again yesterday and speared two of my son's French Fries. What I found is I miss is the crunch and the salt. As you say, even the real ones don't have much of a taste! H'm, I'm thinking some mixing of various flours I now have might make some fun experimenting for all of us that have been adding and adding to our flour inventory! I have not tried the Mesquite flour that came in my last order yet. That might really make an interesting French Fry! P.S. That lettuce wrapped burger was such a gut bomb, I'm now doing a 48 hour fast. I'm really glad you were able to feast on your celebration time with your wife. As far as I know, there hasn't been a study on if one can build a tolerance to carbs. That said, in doing regular meter readings, I have found that I can have a substantial carb meal now that I have been on Keto for over 2 years and it doesn't drop my ketones much below a .3 on the meter. I'm not advocating for doing this more than 2-3 times a year. A feast doesn't happen very often! It is amazing how a little latitude leads to licence.

Hi Steve- Wow - this podcast was chock full of info! Few things I want to share - 1. So cool that you tried the French fry recipe - with your recommendation they will definitely be on my to do list for this week- but I will be sure to give Heavenly Fan cred😊 2. Donated blood this weekend and when the tech did the hemoglobin test- he pricked the side of my finger with the lancet- he said it actually resulted in better output, plus isn’t on the part of your finger that you use - so little pain afterwards for his donors. I thought of you and all the test you need to do for the resistant starch videos. 3. Wow - so proud of Courtney! And of course Conner too. You and your wife should also be so proud of yourselves for the children you have raised - they are what gives so many of us hope in our future- there are young people that want more for themselves and their families that they are willing to serve our country. Please thank them for their service 😊❤️

Ha!😃 I made the almond flour french fries in avocado oil a few days ago! BIG. HIT here. As a matter of fact, Josh wasn't happy when I let the girls eat some of his. 🤣 I made the avocado/lemon mayo for a dip. Had planned to make the leftover cold ones into little churros. 😁👍 VERY cool about Connor's letters and Courtney's upcoming adventure! You and Mama have done something VERY RIGHT! 😇😇 Recently a friend at church lost his wonderful 20 year old son to opioid addiction. He had no idea. You and I are more than blessed to actually have our kiddos with us to be able to go off into the world. It just makes me so thankful to be able to love them enough to set them free. good news about the mojo, I have the oldest version and I never thought the BG was accurate, I have 2 other meters that show my levels 10 or more points lower than then the mojo so I never used it for that. thanks for the info!

Thank you for the French fry review. I just watched heavenly Fan's video of that recipe yesterday. And I really didn't want to make both versions to see which I liked better AND I now know not to bother with the air fryer. Thank you also for suggesting that the coconut fry may do well as a " churro".

It is so fun that you were recognized by Andrew ❤❤❤ I love that. Great job. I order some choc zero halloween ghosts on prime day. White chocolate I've not had that in quite sometime. I got some of their raspberry jam and it came already. It was delightful having PB&J. It is very good. The raspberry flavor is lovely. Occasionally looking at the offerings of jelly in the store but I'm not happy with the carbs or ingredients. Blessings to you and yours.🙏❤👍🍀🍀🍀

@@SeriousKetoHi Steve--I made them and think they are pretty tasty. Here is what I used: 1-8 oz block cream cheese, softened (I use Philly, less carbs) 2 TB. soft butter 1/4 c. sour cream 1 t. butter flavor (could use vanilla) 1/2 c. pumpkin pie filling 1/2 c. allulose 6-8 oz. heavy cream pinch salt Beat the cream cheese, add butter, sour cream and flavoring, beat again. Add pie filling, allulose and salt, beat again then add the heavy cream. Beat until soft-stiff but don't over-beat. I freeze these in 3 oz. cups using a popsicle stick. Allulose makes these come out less hard with the consistency of fudgesicles, which is what I usually make (recipe below). I've tried using Lakanto and they freeze too hard; I prefer them a bit softer. 1-8 oz. block cream cheese, soft 2 TB. soft butter 1/4 c. sour cream 1-2 t. vanilla or butter flavor 3/4 c. allulose pinch salt 8 oz. heavy cream 1/4 c. cocoa powder (opt: 1-3 t. instant coffee) Feel free to share if you think these are good. I just made the keto french fries with coconut flour for the Second time. The first time I use 3 tablespoons exanthem gum and it was so so sticky I couldn’t even complete the job. Yesterday I saw Tim talks and he only used 1 tablespoon of xanthan gum so I just did that and it worked brilliantly you definitely need to eat them while they’re still hot but I was impressed just like you said you know they’re not fries but they are a damn good replacement!! And he even talks about laying them single layer before you fry them and freeze them and put them in a baggie and just pop out a handful any Time to fry them up

Hi Steve, Glad you had a great trip and enjoyed yourself while gone. I have also leaned off the wagon a little and also stayed in keto. I would recognize you and love to meet you, however, I'm in Florida and so the possibility of that is slim and none. I like you don't get out other than the grocery store or Costco. I have a question for you...Bocha Sweet granular sweetener. Do you still use it and recommend it? I went to your Amazon store and I didn't see it, and, haven't seen you use it lately on your videos. I do note that it is a bit more expensive. If you are not using it, what are you using that you like? I have been using monk fruit/erythritol granular and really don't care for it, so I thought I would try Bocha Sweet granular. Your comment would be greatly appreciated.

Hi Steve! I've been using a variation of the quest cinnamon chaffle recipe as a keto pancake and I discovered a fantastic tip. Any left over batter (if thin enough) can be "tapped off" of the spatula into semi droplets into your preferred grease and cooked a little extra to make crunchy keto pancake bits to be used as a snack (and even further if you let your imagination run wild). Similar to the process of making funnel cake.... speaking of funnel cake... keto funnel cake! Love the channel!
