Egg roll(the fried one) in Vietnamese is called Chả giò, and spring roll(rice paper one) is called Gỏi cuốn. Also as a Vietnamese American, super happy to see you eating hủ tiếu as there are many variations of it based on the region! The full name of that dish is hủ tiếu nam vang but you can just say hủ tiếu khô specifically for that dry noodle version you have. Hủ tiếu is the type of noodle, nam vang in general refers to the version of that dish in southern Vietnam region that consists of beef and seafood, khô means dry/soup on the side and nước means wet/with soup.

Nam Vang is the Vietnamese name for Cambodia. During some of the historical period, Cambodia was annexed by Vietnam and the imperial court of Vietnam used the name "Nam Vang region" to call the territory of Cambodia today. Perhaps, Hu Tieu should relate to Cambodia a little, or the Vietnamese have vietnamized one kind of Cambodian dish and call it as Hu Tieu.

Yo Jimmy, for the dried noodle, if the noodle is all sticky up the best way to reheat it is you dammed a large piece of paper towel and put it on top of your bowl, and then reheat in the microwave. By doing that, the hot steam air from the paper towel will separate the noodle without drying it out. Hope this helps!

I’m so glad you enjoy Bún bò Huế. I’m from Huế, Việt Nam and it’s our signature dish. It’s not as famous as phở but in Huế, people have bún bò Huế every day, not phở. Phở is like a signature dish of the North Vietnam whereas Hue is in Central Vietnam. In bún bò Huế, there is lemongrass, shrimp paste, rock sugar, fish sauce, so yeah, that’s like the basic spices. Love Vietnamese food and it looks like you got some really good dishes especially the Bun Bo Hue looks so good. Another Vietnamese dish I love eating is the savory pancake called "Banh Xeo". Also with that prawn cracker pancake thing, used to go to a Vietnamese restaurant that served this awesome Cambodian noodle soup that always came with a prawn cracker on top. So so good.

Jimmy!!! There are two different kinds of Hu Tieu: “wet” or “dry” and you got the dry one. For the dry version, usually they add in the sweet sauce so that you can eat it all mixed together with the noodles and meat toppings. The soup is supposed to be on the side for you to eat separately. Glad you are trying a variety of Vietnamese cuisine!! 😘 Come to orange county for really good Hu Tieu!!!

Vancouver has great Vietnamese, specifically in East Van, because of the boat people who came here back in the day! Kingsway was considered "little saigon" and there is a statue for the boat people there.
