This was SO good!! I never thought to add sweet peppers to quesadillas, but it was delicious! The spice mix is perfect. Not spicy, but a gentle heat. There was enough filling for leftover servings for 2 people. I had storebought corn tortillas that were quite thick, so I toasted them to serve tostadas topped with sour cream w/lime, pepper jack cheese (I'd already shredded it for another dish), guacamole, lettuce and tomato. This is going in our monthly rotation for sure!

I'm about to try this now. I actually cooked some chicken, pepper, and onions much like this last week, and my friend made a Quesadillas out of my meat except they used 2 tortillas instead of folding one in half

I boiled my jalapeño Roma tomatoes, remove skin of tomatoes and grind with fresh onion cilantro lemon and salt but it tastes sweet??? Any suggestion

Is this about the salsa recipe? It may be too much onion or not enough tomatoes. In the description box of the recipe I have the weight amounts. As we know tomatoes and onions come in different sizes. That could have been a factor. Hope this helps.

Once the spices are on the chicken refrigerate 24 hours.. Or season chicken at breakfast, and cook at night. Add a tiny squeeze of lemon, or a small dash of vinegar to help the spices penetrate the meat. The longer it sits, the more aromatic it will be

Why does everyone do the one-tortilla-fold-in-half technique, rather than just put a second tortilla on top?

Because you don't get the fold at the base. You can just put another on top but then the Quesadilla is open on all sides and it's easy for the fillings to squeeze out when you're eating and drop into your lap. If you fold it over it's like a Taco that holds the fillings. Also means you can make Quesadillas with only one Tortilla for a snack or uneven amount of people.

This gal is one of the best when it comes to making Mexican food but one thing I don't get is the use of powdered onion and garlic. Americans used to love using them and maybe Mexicans too, but there is no reason to use them when fresh can be added ( finely grated onion and garlic will intensify their flavors and coat/marinate more effectively ). Those powders impart a strange flavor.
