About christmas fairs in Vilnius. There is no one big market, but there are more separate fairs going on all arround the city :) and in all of them you can find interesting lithuanian handmade stuff But I think they are smaller than before covid.

Apple cheese is basically a very dense apple jam. Requires lots of apples of sorts with high percentage of Pectin, and very long to cook on a small fire continuously stirring with the spoon. Simple but time-consuming technology. After pressing out the remnant liquid in a cheese cloth, it is left to dry for about a month, or even more. Never had a passion to wait that long😁.

Hey, apple cheese is not exclusively a Christmas treat :) On Christmas Eve we do not eat meat, but, I think, dairy is ok. Regarding Christmas Eve, we have a tradition to have 12 different dishes on the table - representing 12 Apostles (Christian interpretation) or 12 months of the year (pagan interpretation as pagans also had similar holiday on that day). Dishes usually include fish, boiled potatoes with linseeds, various vegetable medleys(or what we call "mišrainė"), pastries (usually with mushrooms), little pastry "bites" - "kūčiukai" (this is a must during Christmas), tangerines, nuts, dried fruits, a thick sweet drink "kisielius", etc. Also, many families leave an empty plate and a glass on a table for our ancestors (I bet this also comes from pagan times).

We don't eat dairy, meat or alcohol at our home during Christmas eve. So no salads with mayonnaise. I think it depends on region and family traditions. But Kūčios is the best evening for me, one of the reasons is different food. Linksmų švenčių!

Dairy is definitely not okay. No meat, dairy and eggs. Just fish, mushroom, vegetable and some egg and dairy free sweet dishes. Only wine is allowed for alcoholic drinks, but just a little amount.

If you like dumplings, there is a little town not far from Utena named Kavarskas that has a tiny little restaurant called Kavarsko koldūnai that has wonderful dumplings. It's worth a trip! Maybe make it a trip if you want to see the horse museum in Anykščiai, which is not far away.

My nana used to make this cheese and we usually ate it with the curd cheese (varskes suris) on a piece of white bread (batonas). The curd cheese is so velvety and rich in texture, but mild in flavour so I do think it compliments it well. It would work well on any cheese platter too :)

My grandmother used to make apple "cheese" with cloves and aged it over a traditional oven with an open fireplace, so it used to get that deep smoky flavour. Amazing taste. Probably cancerogenic too :D

On between ~7:18-7:20min. video you crossed through the bar that has the biggest craft beers selection in Vilnius. It called Nisha Craft Capital. I really recommend to visit it someday :)

Hi Laura, Even though our family here in the US celebrated most Lithuanian traditions, or were at least aware of them, I had never heard of apple cheese. Looks delicious! As for the Ethiopian coffee, I'm so glad to see that you enjoyed the experience! That is owned by Eskedar Maštavičienė, who has appeared on numerous tv shows in Lithuania, which I have seen through KZbin. She roasts her own beans, that's why they are so flavorful. Her enthusiasm and love for the country is much like yours, so I wonder whether you had actually met her? Linksmų Kalėdų!

Usually, there are more small stalls around the tree - this year are hardly any at all. Not sure if it was because people couldn’t afford to produce enough to invest in having one.

Sigh..... The ongoing Covid situation has put a halt to our "normal" annual trip to Lithuania, so I have found your video's a somewhat whimsical indulgence, and whilst not the same as being there, is as close as I will likely get for a little while....but we did none the less have our version of the 12 course Christmas Eve tradition here (in Australia). If have found your video presentations to be delightfully personal, so I shall continue to view LT through your eyes until I have the opportunity to be there again and immerse my self in that special place..... that is Lithuania.

I was looking forward to this video. Now that you have seen the current Vilnius Christmas Tree, I encourage you to google the previous ones. Lithuania has got a name for making very modern and artistic trees. The last year's tree of 2020 is very cyberpunk in particular, I encourage you to check it out. The reason the Christmas Market looks so small this year is due to Covid. Last year we did not have an xmas town at all. But you can look at pictures of 2019 and see that it wasn't as small. Lastly, I want to ask, how is your studies of Lithuanian going? On this front, it may be a nit-pick, but you seem to call Vilnius as "Vilnus". The "iu" is soft, not hard; more like "news" than "noose". The rule is that "i" in front of a hard vowel like "a, o, u", as in "ia, io, iu" makes that vowel soft. Lithuanian pronounciation is not that difficult, you just need to learn a few rules, but generally that amounts to learning which letters correspond to which sounds. Merry Christmas !

Apple cheese is quite popular, but throughout the year, not specifically for Christmas. I consider it a bit healthier snack than the candies, however not sure if it is true :D My mother has tried once to make it in the apartment, she hanged the cheeses above the gas stove that the cheeses dry out, and banana/little flies started to live in them, so eventually she had to throw them out. It is not easy to make them :D

Wishing you a Merry Christmas. I wonder how you are coping with the winter weather in Lithuania. Lisbon, where I live, isn't as warm as people think, but the pictures Vilnius make me get cold. The Christmas Markets seem to be a bit dull to me, but many businesses/restaurants have made a real effort to get even passers by into the holiday mood. Maybe as Christmas present you could get a microphone that works better in windy weather. I don't now where to get them, but they would improve your videos.

This is not real Chrismas tree in Vilnius... Prienai have real Christmas tree in their town... In my opinion tree in Vilnius they mocking from people. I remember real Christmas tree 10-15 years ago... then was real Christmas tree in that time... I don't love Christmas tree from plastic or anything like that... :) BTW you can see what I'm talking about for example in Prienai town...
