@scalywing1 3 жыл бұрын
That is a ridiculous comparison. It is just a cultural difference. That doesn’t mean it is wrong. Apple pie is a sweet, dessert dish. It does not have any savory elements. Pasta with cheese is already savory, so adding chicken makes sense. If Italians don’t eat it, or even find it disgusting, then that is fine. Some cultures find pork to be disgusting, but lots of Italian dishes use pork.

@bobon123
@bobon123 4 жыл бұрын
@@jmoa5758 On the side, or even better after it, as a second dish :-) There is really a cultural taboo in Italy about chicken in Pasta or Pizza, difficult to explain honestly: you can have beef or pork (various ragù for example, or sauces done with sausages), even goat, wild boar, deer, sheep or hare (in particular in some regions), but chicken just feels wrong. Do not know why. Also consider that in Italy traditionally you eat primo (first dish, pasta or rice) and secondo (second dish, meat, fish or eggs) and contorno (a side dish of vegetables served with the secondo), most days. A simpler pasta all'alfredo followed by a chicken dish and some spinach would be the most typical meal in Italian hospitals :-)

Watching your videos, I've realized that Italian cooking is actually even easier than I thought. I feel like I could make all the (non-tomato) sauces I want using just butter and pasta water or oil and pasta water. No cream, no garlic, no onion, no excessive amounts of ingredients. Your channel has really changed my mind on Italian pasta. I always thought that Italian pasta required so much finesse and complicated because a lot of Italian restaurants sell themselves as this super high end expensive thing and wasn't easy to make. When i'm finding that actually most authentic Italian pasta is quick, simple, and easy. Americans put proteins (chicken/beef/shrimp) in pastas because they always need meat LOL.
@ivantheterrrible9213

There is a difference between American-Italian and original Italian restaurants. Those first ones you can find almost everywhere, and they don't represent Italian cuisine in proper way. Italian food is mostly easy and fast to do, with high quality ingredients (quality over quantity). There is nothing wrong to connect meat with pasta (you have pasta Ragu, pasta with Seafood...) but should be done in proper manner. That is why i like his YT channel, he is pointing out things that needs to be addressed, in tasteful way. Have a nice day.

America is not Italy, so is logic that someone decided to make his own version, with different and more ingredients, following his own tastes. The problem is that is not italian kitchen, which is the FIRST thing they say. You can make all the variations you want, but at least, please, do not pretend you are following another recipe. If you used tomato sauce instead, then it would not be Alfredo. But adding a little garlic or onion or pepper or herbs is probably okay, as long as you can still taste the cheese. Adding chicken to everything is just something we do in America. I don’t know why, but I think I will go fix myself some chicken fettuccine Alfredo tonight, because it is delicious.

@@scalywing1 I agree. Vincenzo also said that Alfredo pasta doesn't exist in Italy. Since pasta existed, i think any people can create their own dish for pasta. Not because its pasta dish, its from Italy. Although pasta originated from Italy, it doesnt mean we cannot create another dish using pasta.

In France, we often eat pasta with butter and cheese as a kind of last resort when there's not much else in the fridge. I think it tastes fine and using butter instead of olive oil in pasta can indeed make it creamier. I find it to be quite a comforting food to eat when you're sad or hungover and just can't really be assed. It also gives me memories of being with my family in France. However I've never considered it anything special or called it "alfredo", though I have seen it served in restaurants simply calling it "pâtes au beurre" (often what you end up eating if you are vegetarian and you're in a small countryside town). All my english family find the idea of putting butter in pasta to be totally bizarre though, but nor do they put olive oil in pasta and instead that "rice bran oil" is the way to go because it "has no taste", so I don't really think they get pasta...

When I moved to New Zealand someone asked me to make them authentic Italian Pasta Alfredo and I didn't know what it was, I googled it, and the ingredients were cheese and butter and told them "I could make you Cacio e Pepe but I don't have the right cheese and I don't want to put butter in Cacio e Pepe" but they didn't know what Cacio e Pepe was and insisted on real Alfredo pasta, so I googled this crap Alfredo some more and yeah I had the same reaction as Chef. Why the hell did this thing become so popular. Matriciana, Pesto Genovese, even Carbonara is not as popular as this Alfredo thing. I will never understand this obsession with butter. In my family butter is used only for baking and besciamella.

Honestly, food is THE cultural medium through which culture gets transferred and adopted. It is completely normal for a recipe to change substantially when it reaches new shores according to local preferences and neccessities. I mean im chinese, where noodles were invented, and i have never heard of even one chinese complaining about italians appropriating our noodles and making completely different recipes with them. Its simply a different dishyet theyre still called noodles this noodles that. pasta is just the italian word for noodles. people need to at least get over food being cooked differently from what theyre used to. if its worse than what youre used to, then let them be, at least leave others the freedom to EAT whatever they want.
@MikaBeeF
@MikaBeeF 4 жыл бұрын
@Mahima Bhat i actually heard about this indo-chinese cuisine, and ie found it mighty interesting that even india would adopt chinese foods, since india is one of the 5 great cuisines itself. we chinese have a similar issue like the italians with americna chinese food, where most of it is invented by chinese immigrant sin america and is not authentic at all but we understand that back in the day these immigrants needed to make money and their onl option was to open a restaurant and since they were in a foreign country they had to adapt the recipe substantially. but successful dishes like chop suey or in this case chicken alfredo pasta need to be given credit where credits due. this recipe probably secured hundreds of households income for italian immigrants, not to mention that it probably tastes better than just pasta with butter and cheese.

I’m one to respect classics. But the way i understand it here is: Alfredo pasta didnt exist in italy and has been invented in america... Italians came and start claiming it is not the way to do it 🙄🙄as usual.. We dont see often a french chef bragging around on the technique used for...say veal stock even tho dozens of way of doing it are available around here. I dont think putting garlic in a carbonara for example is something worth losing your shit over because frankly, it doesnt hurt at all. Not everyone has to pick the pasta out the pot with a fork crafted in the Abruzzes wood leaving a messy kitchen only to pretend to do it right as the « very first guy to do it ». Just because he is italian and well suited doesnt make him the owner of the dish. My two (more like 5) cents here
@chuwaah
@chuwaah 4 жыл бұрын
But alfredo was first created in rome? You can’t say you respect the classics without knowing its basic details. It’s Americans who keep westernizing shit from different cultures. Using different ingredients makes an entirely new variation of a dish. It’s a different recipe when you use different shit for a recipe you want to cook. Nobody’s telling you to cook on a messy kitchen, it’s all about the food. If you don’t know that then you seem to be a really bland cook

So I believe Americans use things like cream or make a cream sauce is because it’s rich and more so because sauce can be reheated more easily. If pasta get cool they add more hot cream sauce. Plus I think Americans associate white “Italian sauces” as being all “Alfredo’s”. Americans tend to like heavy creamy dishes, rich in fats and cream, cheese, butter, sour creams, etc all appeal to the American tastes. Using dry herbs is more of a convenient factor. Also why Americans use semolina pastas for all Italian dishes is because they are more filling and heavier from the starches. Americans tend to like to pair meats with everything so that is why you see chicken commonly plated with “Alfredo”. Bottomline is it’s almost 3:00 AM when I’m writing this and you inspired me to make a “snack” cause I suffer from stomach problems a lot every day and in this moment my stomach was upset so I went to the kitchen and yes I used dry Alfredo pasta cause I always have that in the pantry, but I make authentic Alfredo sauce with butter 🧈, pasta water 💦, and parmesano-Reggiano cheese 🧀, and nothing else! and it was easy, and so tasty!! Even with semolina dry pasta. And yes this was not as rich in dairy which my stomach cannot handle well and this actually helped settle my stomach too!! I have to agree with you, there is no need for all the extra dairy, pasta water, butter, parmigiano-reggiano and fast mixing creates a beautiful creamy Alfredo!!! Thank you for your wonderful videos!!

I really had no idea that an alfredo did not include a béchamel before this. The difference between Italian cuisine and Italian-American cuisine really is astounding, I really want to try the traditional version now

And even then most "Italian-American" food nowadays is an Americanized bastardized version of Italian-American-Great-Grandma homecooking. I grew up in an Italian-American family on Long Island, NY in the 1970s. My uncle traveled cross-country in a van, sometime in the late-1970s and he reported back to us, with horror, that in the Plains States, people thought, "Spaghetti with tomato sauce and cheese," was random egg-noodles covered in ketchup and shredded Velveeta™. 🤮 I don't think things have changed much.

It is so much funny watching your react videos, I'm Brazilian, Italian grandson, I feel the same way when Brazilians put KETCHUP OVER THE PIZZA. Outside São Paulo which have great great number of Italian descendants it is very normal to eat pizza with ketchup, but here in São Paulo it is much more like a crime.

This guy reminds me ofJuan Pablo Sanzi of "La Chancha y los 20", but very much less angry. I love how he's not afraid of saying what needs to be said about food and how he shows the real way of cooking italian pasta.

In America we think we have to add meat to all pasta dishes or it’s not complete. Instead of having the meat as a separate course we think since it’s pasta we just throw it in pasta. I don’t know why, I guess that’s the difference of Italian food and Italian-American food.
