i used the exact proportions but the marinade does not have the same colour as the chef"s. any ideas as to why?. more turmeric and chilli powder perhaps.

Chef's never give 100% their restaurant recipes. They want people to come back and dine there. A lot of chefs also go on saying like "ooh that redness that is the chili powder/paprika powder", but in reality it's artificial colours.

@@MrQuagmire26 Many people use artificial colors. But you can also get it naturally. Get some Kashmiri red chili powder and mix it in a small amount of mustard oil. Leave it for 5 minutes and then add that. You'll be amazed at the redness extracted naturally.
