These cardamom buns will give you a lovely change from the very typical cinnamon buns that we consume quite often. The amount of cardamom can be more or less based on your preference but I would say if you are not a regular user of cardamom then just start with one tablespoon for this recipe. That will give you the right amount of flavor that can be handled easily. On the other hand, if you are very familiar with cardamom and consume it daily like me, then you can add more. One important thing about all my recipes is that, my recipes will always have just the right needed amount of fats and sugar. I mean I will not give you a recipe that is unnecessarily loaded with grease and sugars. I have come to realize from my two decades of cooking and baking from scratch, that to enjoy baked goods without compromising your health is to use fats and sugars in moderation. Stay happy and healthy. MEK Kardemummabullar, Swedish Cardamom Buns For the dough let's first make the roux. ⅔ cup milk ¼ cup all-purpose flour Combine milk and flour in a pan and place on heat. Start cooking it slowly till it becomes a thick pasty mixture. Remove it from the heat and let it cool. 2 ¼ tsp active dry yeast ¼ tsp sugar ¼ cup warm milk Dissolve yeast and sugar in milk. Stir to combine and let it rest for five minutes. 3 cups of all-purpose flour ¼ cup sugar ½ tsp salt 2 eggs 6 tbsp soft butter Cooled roux Dissolved yeast For the cardamom spread: 1 tbsp cardamom seeds- coarsely crushed 6 tbsp soft butter 1 tbsp flour A pinch salt ⅓ cup sugar Egg wash for brushing the top Pearl sugar or poppy seeds to sprinkle on top Sugar syrup glaze or corn syrup glaze For this dough, I will use a stand mixer because it is very soft. Line two trays with parchment. The baking temp is 350 F and the baking time is 25 minutes. Combine flour, sugar, salt, dissolved yeast, cooled roux, and eggs. Mix with a dough whisk or use a stand mixer to form a rough soft dough. Now add room-temperature butter and keep mixing. Knead till you see a smooth dough. Cover the dough bowl and let it rise at room temp till it doubles in volume. Then punch the dough down, shape it a round, and place it in the refrigerator for a few hours. Refrigerating it helps with easy shaping. Combine the cardamom spread ingredients in a bowl and mix it all well to a spreadable consistency. Dust your work surface with flour and start shaping your dough. Spread the dough into a rough 12 by 18-inch rectangle. Spread the butter filling on half the dough. And fold the other half onto it. Start flattening it with your hands and close the edges. Flatten it again to a rough 12/18-inch rectangle. Make sure you don't tear the dough. Cut one-inch wide ribbons from your dough (cut from the long side) as can be seen in the video. Then split these ribbons again by cutting them from the center but leaving one edge attached. One important point to note: When cutting these ribbons again, start cutting them from the side where the seam is. Don't cut from the sealed side. After you are done splitting them all, dust the split ribbons with flour. Start twisting the ribbons keeping the top attached. Then twist it around your fingertips, overlapping the last part on the top and tucking the end portion underneath. Shape them all and arrange them on the trays. Brush the tops with an egg glaze and sprinkle with poppy seeds or pearl sugar. At this point, after shaping them you don't need to proof them again as they will overproof and will lose shape because it is a very rich dough. So after shaping and glazing slide the trays in the hot oven and bake them right away. Bake them for 25 minutes and make sure to rotate trays halfway through baking. Then take them out and brush them with sugar glaze or even better, some melted butter. Enjoy them with evening or morning tea. And regards from My Earth Kitchen to yours.️

I discovered this pastry last year and i just fell in love with it. I am not a fan of cinnamon buns as i always found them too sweet. But the "spiciness" of the cardamom balance out the rich and sweet dough. Its just perfect 😍

@@yaminimoorthy9573 😂😂 not spicy "hot" like a chilli! But spicy like "it's a spice". Cinnamon tastes warm and round and kinda sweet on its own, but I find cardamom sharper and "fresh". With all the sugar in the filling, I prefer the "freshness" of cardamom instead of the cinnamon 😁

Beautiful! ❤ Kardemummabullar is my favorite, much tastier then kanelbullar! In Sweden we definitely do not put seeds on top though, its should be pearl sugar och cardamom mixed with sugar. Thats how bakeries sell them anyway. You can also gave cardamom in the actual dough
