There is a greater part of west bengal apart from Kolkata. You should explore Darjeeling, Doars, Koochbehar, Raigang, Murshidabad, Purulia, Bankura, Jhargram, Salbani, Garbeta, Coastal regions and many more. You can find more authentic bengali foods also.

Mr Bali you were near my home. I live in New Town. You are right, Eco Park is too big. There is a full golf course inside the park. Wonderful cottages and restaurant in the island of the big lake. You are the first person who explored Kolkata very nicely. I have a wish to meet you. Next time when you will be in Kolkata I would like to meet you. God bless you and your good work. As a bong (originally from Kolkata but currently reside in Delhi for last 12 years), I would like to share a couple of fun facts about Bengali cuisine that you'll love to know. 1. Shukto: A "Starter" in five course Bengali meal that tastes bitter. The purpose of having it before the maincourse, it's a "Palate Cleanser" that enhances the appetite. The veggies used in it has several benefits, "Sajna" (the drumsticks) has antidotal properties to certain seasonal deseases. You'll be surprised to know, this popular Bengali curry has it's origin rooted in "Portuguese" food culture and were brought to some parts of India, back in 14th century by the Portuguese traders after Vasco D'Gama. 2. Ajmouda (Celery seeds, the spice): A typical spice that has a very prominent as well as wide range of usage in Bengali cuisine, in form of "Tempering whole spice" (tadke ka aakkha masala) to "Powdered spice mix". In Bengali we call it, "Radhuni/Channoni. Even if you call "Ajmouda", the Hindi name of it, the spice-sellers in Delhi would barely be able to recognize, unless you try finding it in "Khari Bauli". 3. "Jhinga" is not a "Torai": "Jhinga" belongs to the same family as "Torai" does. However, the breed is different. In large "Mandis" around Delhi (like Azadpur, Okhla or Mehrauli), you'll find both. Technically "Jhinga" gathers more fibrous contents as it grows older that can't be swallowed (Cheewda). Bengali cooking trick lies in "the greener the more tender". 4. Chalta is "Elephant Apple": In Assamese, it's called "Otinga". The fruit is sour in taste, secretes a thick "Milk" lookalike juice that's used to prepare a kind of "Khatti-Meethi" chatni to stimulate the human digestive system secrete the necessary enzymes. 5. "Khamaloo" is "Kand Aloo": It's just another breed of "Kand Aloo" that tastes slightly sweeter than a regular potato. 6. Mutton Stew: The "Mutton Stew" you tasted instead of Nihari as the morning breakfast is basically the version, you would find in most of the North Indian cities including Delhi. This onion and yogurt rich mutton gravy is flavoured with whole spices only that's the reason it's often called "Khara Masala Gosht" or "Ishtu". However, there are a couple of variants more in India. Kerala Mutton Stew, Konkani (Goan coastal style) Mutton Stew, Bengali (Irish style) Mutton Stew etc to name a few. Though the "Whole Spices" are commonly found as the flavouring agent in all the variants everywhere in India. The "Kerala Mutton Stew" is rich with smoothly grated coconut or coconut milk and cashew nuts tossed in clarified butter (Ghee). On the other hand, the Kolkata version of "Mutton Stew" gains it's too thin yet mellow flavourful consistency by adding milk, clove and green cardamom. The cooking is entirely done in butter. Pretty big chunks of carrots, fresh beans, potatoes, onion, garlic and even papaya are boiled together to form a vegetable stock. Then the stock is simmered with boiled pieces of mutton and the skimmed milk is added towards the end to finish the recipe. Forgot to mention, the recipe has a major Irish connection or better to say, the recipe had been adopted straight from the Irish kitchens during the colonial period. 7. Saffron Tea: I've seen you were overwhelmed with the "Kesari Chai" being sold at the streets of Kolkata in another episode of this series. I think the source is somewhat misleading since it has never been a signature drink of Kolkata apart from that just one or two odd shops selling it. The origin of "Kesari Chai" is rather rooted in Kashmiri, Afghan "Kahwa" or Irani tea recipes. 8. Kolkata Biryani: Although the Kolkata version of Biryani doesn't belong to any original school of Biryani cooking traditions like Lucknow/Awadhi, Lahori or Hyderbadi, but it has surely gained enough popularity to remain in the row of a couple of best variants of Biryani in India. There are various types of Biryani, formed in different parts of our country with their distinctive characters under the influence of local taste. To name a few Bohri, Andhra style, Malabar/Thalassary and Sindhi Biryani apart from the popular ones. Kolkata Biryani descends the Awadhi culinary tradition in this regard. Some scripts say, the banished Nawab of Lucknow, Wajhed Ali Shah brought his Awadhi khansamas along with him, to Kolkata in order to maintain the royal essence at least in his food habit. The treasure of Awadhi cuisine was flourished here through the ages to match the indigenous tastebuds but more importantly, which could justify the intellect and the supremacy of Bengal in various form of arts. Harishjee, you struck the right string about the character of "Kolkata Biryani". Truly it's high on aroma but low on spice. However the fragrance never overpowers the hint of spices. Then you get a boiled egg and a big chunk of potato, soaked in all the goodness of "Pakki Yakhni" that lets you experience the subtle flavour while a bite taken. Apart from these two, the other key ingredients that help "Kolkata Biryani" do justice to it's character are, green and black cardamom, clove, black peppercorn, mace, nutmeg, screwpine water, rose water, mitha itr, saffron strands, milk or even "Mawa" (according to some recipes) to add to it's aromatic presence.

you have put these facts in a very systematic manner - very well explained..... thank you so much for writing in. I really wish if i could have this information with me before i was travelling or during the journey.... I mean i should have done better research, i always feel that once i am back... bcoz there is always so much in every state that i miss out and then i realise through comments i should have done more research... I want to personally admit that Kolkata food has so much more, i realised that its much more than what meets the eye.... There is a story behind each food and so many times the story is interesting to learn and one can relate to the food better with such story... All this i am now realising through comments..... thanks again for sharing each of these point by point in a systematic manner....

But to be frank, it's almost impossible to pull out all the facts and figures at a single go, about our regional cultures. Probably, that's because of it's ultimate vividness.
