Ingredients
4 cups flour
1 cup white sugar
4 tsp baking powder
Pinch of salt
250g butter
1 cup raisons
3 eggs
1 tsp vanilla essence
1 cup castard
Method
-Preheat oven to 180° celcius
Into a big bowl sift flour, sugar, baking powder and salt then mix together
-Cut up frozen butter into small cubes and rub into the dry ingredients until it resembles bread crumb like texture
-Add raisins and mix
-In a separate bowl add eggs, vanilla essence and castard. Mix together
Make a well in your dry ingredients, add wet ingredients and mix using a spatula or your hands until combined. Try not to overmix
In a clean surface sprinkle some flour, put your batter and flatten using either your hands or rolling pin. Cut the batter using you're preffed shape or a glass
brush with an egg yolk and bake for 20 minutes or until scones are golden brown and enjoy
