Tyler is soooo funny! By the way: if you follow Poilane's recipe, your sourdough must be absolute perfection because they make the most perfect bread for decades. You can find their bread (thinely sliced) in tiny supermarkets in Paris and this is my go to for breakfast, toasted, with salted butter melting on top. So yummy! It also makes a perfect base for croque monsieur! Got your back Tyler :)

On the sourdough: people get really crazy about having lots of bigger holes for your crumb. I don’t know why; seems like a great way to spill melted butter all over yourself. 🤷‍♀️ I’ve been baking sourdough for almost a year and a half, and I definitely prefer it when my crumb is not super open . We exclusively eat my sourdough and when my three year old is eating a peanut butter sandwich, it just works so much better with a less open crumb! Ears are the same way. Getting a nice ear on a loaf is pretty and kind of cool to make happen, but it’s so impractical when the primary people eating your bread are 10, 7, and 3. 🤣

I make those candied nuts every year. They are great. I use walnuts but the original is pecans. It’s 1lb nuts; 1 egg white (frothy), 1 Tbsp water; 1 Cup sugar; 1 tsp cinnamon, and a tsp of salt. Mix well then Bake on 300 for 40-50 minutes stirring frequently.
