12:37 im so glad you mention this. salmon like most people think its rare to get parasite. not true. its pretty common for salmon to get parasite. special chef has train eye that can spot parasite but even then you cant see every single one. the only fish that i truly trust is tuna. i filet so much fish that i sometime seen parasite on salmon. when they say "fresh" its not frozen. flash freezing fish kill most parasite. ( there are some parasite that can survive frozen but those actually rare) most restaurant that serve sushi are flash frozen. so freeze your fish before making sushi out of it.

Here in Finland (rigt next to scandinavia) we call that Graavilohi. You can make it much simpler aswell, just put salt and let it sit in the fridge. We never freeze it before though. We eat it with Karelian pie with some boiled egg and butter mixture. :D.

Nice video, Matts! I'm glad you explained the differences between King(Chinook), Silver (Coho), and Pink salmon. I've seen plenty of posts on social media of people with Silvers not knowing they're not Kings here in California. And the silvers are endangered and are illegal to catch here. Thanks for sharing the info and great content! And the salmon recipe looks great, thanks for sharing that too!

So, in my family, we make gravadlax all the time. I would recommend that you use much more cure, and that you cover the fish completely, so it makes a cake. It helps with the flavor a lot. Also, its common in Swedish cooking to put whole lengths of dill in the middle, similar to what you did, but not exactly the same. The flowers too help to add flavor if you can get that. For sauce, traditionally we use one part dijon mustard, one part honey and more dill chopped fine. We commonly call that gravlaxsås and its very good with it. Enjoy and thanks for this variation!

When you cut gravad laks, you do it at an angle and don't get the skin, kinda like they do with sushi. Gotta love some gravad laks on toast with rævesovs or Mayo 👍

Gravad Lax its called in sweden, you use sugar and salt :P and herbs. you need to slice the fish very diagonal, so u get wide slicez, like how they do sashimi, but even more at an angle :)

I used fresh lemon instead of vodka and sliced lemons salt and dark brown sugar and cured the salmon. I used to live on the seacoast near Portsmouth NH. used to get maine shrimp, blue fish (really cheap like $2.00 for a 15# cleaned Bluefish) Bluefish is used as Cumb on the shrimp and lobster boats. I currently like near Mt Shasta, CA if you're ever up this way give us a shout.

I've never heard of using vodka in gravlox but a i've done this a bunch with the thin rear end of smaller salmon. I picked up somewhere long the way that if you use some shaved/noodled beats the red juice adds a lot to the finished product. Beats are naturally quite sweet and apparent using beats was quite traditional in some places, my guess is eastern Europe, Russia, Ukraine etc. The red staining it leaves on the meat sure look great!

A hawaii fave is grab a filet put in on a pan or foil. Slather the fish with mayo, make a shoyu sugar mix (teriyaki mix), pour it over the the mayo, then add furikake all over the fish. Bake at 350 till done

Another good way to tell a coho from a chinook is to run your fingernail over the tail lengthwise. A coho has ridges, a chinook will be smooth.

You should try make a traditionally Swedish dish with it called "smörgåstårta" it's like a cake but made out of bread, mayonaise, gravad lax, dill, shrimp, lemon and dijon mustard etc it's really freaking good.
