My dad used to eat this back in Hong Kong for lunch weekly. No sauce, no fold, on top of a big plate of rice. The version there has BBQ pork, shrimp, and bean sprout instead of bacon, but I'm sure bacon is just as good.

You read my mind, I was going to suggest egg omelet video. I don't know if it's authentic Vietnamese omelet or not but he fries eggs with green onion and fish sauce and a small bit of salt and pepper. It's really good with rice or with baguettes.

Apart from your sauce, I do this on the regular (love this for breakfast and I do the corn flour trick) Your sauce, I don't eat mine with any sauce - I just do the omelette part, like you with whatever I have, Thank you for a great addition❤️ Hope you and your family are doing well😊

There was a Chinese restaurant in matautu uta Samoa apparently they white Chinese and nz maori. my samoan aunty went and got a job there when i was 4 year old. She brought home a plate full of egg foo young omelette and fried rice. I swear it was one of the best food I've tastes. Over here in Oz the Chinese dont cook it here. I dont know why. That's too funny! I was never able to make the traditional french omelette because our pans were so bad. I would end up frying one side and leaving a lid on. When I took it out I got that exact fluffy texture! Who knew I was making something like egg foo young all along!

Maybe not add any soy sauce, or sub "usukuchi soy", which is Japanese extra-pale soy sauce. I think most oyster sauces aren't too dark. If you'd like a similar oyster flavour, I also recommend "abalone sauce" which is a mid-caramel colour. You'd end up with a blond-ish colour overall I think! Definitely like your way of thinking, as a sauce that's too dark brown will obscure the sunshine yellow of the egg.
