Nice catch! We love Bonitos in Jamaica but we normally steak it, season with salt and pepper, heat the oil with garlic, scotch bonnet peppers n pimento berries then fry crispy. Afterwards we use a bit of the oil it was fried in, add onions, scotch bonnet peppers, bell peppers, carrots, chayote, pimento, vinegar salt n sugar to make an escovich sauce then pour over the fried Bonito slices n enjoy

I grew up fishing off the rocks in Redondo. We started off using bonita just for shark bait, then one day an old man told me I was wasting some good eating fish. The real trick was to cut the head off as soon as you caught it and stick it down into a bucket of sea water, in order to bleed it. I cleaned it just like you did, making sure to cut out the dark line. Then simply rolled it in flour, salt and lemon pepper, and fried it up. I had that for breakfast several times a week. Good eating. Thank you for your great videos.

LITTLE TUNNY: (euthynnus alletteratus) aka false albacore, fat albert. That is what that is. On the west coast. There is what is called a PACIFIC BONITO: (Sarda chiliensis) Most commonly called bonehead “poor man's tuna,” which also has a very different and distinct skin pattern and do get larger in size. It's flesh is not as bloody. A lot like the Blackfin. I enjoy bonito, Along with the mackerel species, sardines, anchovy, it has the best Omega 3 properties you can consume.

Boil it in salted water wrapped in cheese cloth, drain and repeat. When done the second time let it cool break and flake it up and make traditional tuna salad. It’s way better than the stuff in the Can!

we use to catch them on the pier in n.c. i have never ate it. but when your fishing with a bunch of jarheads you see alot of things eaten. they would chunk them up and squeeze lemon juice on them. they loved them.

The color of Bonita can throw one's mind off before ever trying it. I like to think it's similar to salmon in color, yet closer to tuna in taste. Seared quick and hot after seasoning on a grill with some ginger and wasabi sides is crazy good!

Born and raised in San Diego on the sport fishing boats, and Bonito and skipjack were considered trash fish back then (I’m 41 now) , and I still don’t eat them. When we caught them, we used them for Mako bait. I’ve never seen it at any restaurant on the west coast or in Florida (lived there for 7 years).

Started going to Navarre as a kid in the late 70's through the 80's for summer vacation. When we started, the bridge had a little toll booth to cross. We would stay at the Holiday Inn Holidome and it was the only thing there except for a few condos and single beach homes. Now that I have kids of my own, we go there to enjoy the best beaches in the Gulf. My wife's happy place is to drive Opal Beach. We were there 4 days after this video on the 18th and now know why there was a high water mark in the sand almost to the pavilion. It was our first trip in the fall/winter and I still couldn't get the kids to come out of the water. My son fishes the pier and he said tuna was getting pushed in and the kayak guys were able to reach them. Summertime is Spanish and Kings. I dearly love the area. We could have a family place down there, but my father thought that $15k was waaay too much for a lot on the bay back in the day. Thanks for the video.

The Pacific Bonito (sharp teeth - found on the west coast of the USA and also and down here in Australia) are pretty good eating. They are a different species to the false albacore ( no teeth - Bonita) that you were catching off the pier. We also catch them here in numbers but we call them Mackerel Tuna. They are a much bloodier flesh than the pacific bonito.

We always grilled them after letting them set in a little lemon melted butter salt pepper and a little soy sauce along with just about three ounces of some good red wine and when we melted the butter we also added some dark brown sugar. Let it set for anywhere from one to four hours if your wanting it quick if not let it set in the fridge overnight and slap those slabs on a nice hickory and I like to add some red wood oak chips and I smoke it slow for a couple hours. Then make up some melted homemade butter, is the best, lemon, salt and freshly ground pepper. Then it’s slapping your mom time with your first bite and a good cold brew. Any sides you want. I like hush puppies onion rings and sliced up fried tater logs.

Love your content Brant, I've lived in CA 50+ years, never seen Bonita/LTunny on a menu on the west coast, only in tuna cans from Asia as they do not come up into US waters. Closest thing we have N of Baja is Skipjack Tuna which is similarly bloody red meat and also considered a trash fish. They tend to school in warmer currents with Yellowfin Tuna. We do have local Pacific Bonito brother to the Atlantic Bonito which are smaller skinny tunas with sharp teeth. They are bloody but great eating if bled quickly.

I love fishing Navarre pier. I grew up on that pier myself. I was out there 73 74 and 75 all three summers camping out on the beach all summer. I loved it when the blue crabs would come in to spawn. There were hundreds of thousands all up and down the beach and we’d catch the biggest males along with some soft shell crabs and we’d fill our freezers up at home along with a lot of reds snappers sheep heads flounder. I’d jog a bull weight along with a long shank hook with minnows and it would feel like was were snagged but it would be a four to eight lb flounder and we’d go gigging at night with the tide in and it like a sheet of glass on the water. Where you said y’all had one of those apartments is right where we’d set up camp and that’s where the crabs would spawn at every year. People wouldn’t keep red fish. They called them a trash fish like Bonita but we knew better and we’ve hung into some twenty plus lb reds. We’d be on the pier when he opened and he took care of all us fishermen by putting a limit on the distance people could surf and swim. If a person came in that area they got a three ounce weight three at them by that guy and his 14 foot homemade surf rod. I’ve seen him hit a couple people and it wasn’t nice where that 3 ounce weight hit. A chef that had a restaurant down town would come out and buy fresh fish from us and he gave us top dollar. We sold him everything from reds to crabs.

On the pacific side when we catch bonita we don't bleed them and we'll smoke them. We've tried bleeding them and it honestly was no different in taste. I've tried pan frying, grilling and even raw but never really liked it other than smoked.

I’ve been watching a lot of videos from my home of St. Bernard Parish Louisiana & off of Mandeville, La. in Lake Pontchartrain & the Speckle Trout bite has been crazy. The videos have been driving me crazy I fished there during the middle of October but while we were down there my sweet sister got in a serious car wreck & of course that changed our plans, but thankfully after 3 long surgeries she’s now in rehab & doing much better but that one trip I took out of Hopedale, La. with my two older brothers was amazing!!! My sister’s name is Dorothy, & I mean this sincerely, all prayers are welcomed. Thank-you Brant for an another awesome video, plus every time you fish at Fort Pickens it brings back such awesome memories of my childhood as our parents took us camping there at least once but sometimes twice a year & the amazing time I had as a child with my family many moons ago during the 60’s & 70’s.

Navarre surf fishing is one of my favorites- I have walked the pier but am somewhat intimated on lack of tackle knowledge & # of fishermen. Train us up.. Great watch when you in the blitz

Always told to bleed one if your going to eat it. You cut a ring around tail soon as it hits the pier, or slice base on each side bleed out and soak in clean ice water.

Up in the northeast they’re considered a very highly regarded game fish and many folks spend big hours and big money on specific gear to target them. We call them false albacore or albies. If someone was to harvest one off of a beach you’d definitely get some looks and comments coming your way. Not to be confused with the Atlantic bonito we also get up north.

Nice video. My buddies are catching blackfin off Navarre Beach in kayaks for the past couple of weeks. I’ve eaten Bonita and compare it to bluefish - edible but not desirable. We use Bonita for chumming red snapper.

I agree with you Brant. Bonito get a bad rap. From my experience if you take care of the fish it’s an awesome smoker. Makes a Great fish dip. I guarantee you no one could tell the difference between it and black fin smoked. Yummy!!!!

Yup we caught one and we bled it out like a tuna . Took it home filet it and coated it in Montreal steak seasoning and seared it . We liked it but yea tuna is way better . Awesome video

Here's the mix up what they get on the West Coast are Atlantic bonito. What we get here on the East Coast and also West Coast of Florida are false Albacore or also known as Bonita. So when you hear somebody talking about them being good eating their normally referring to Bonito and not Bonita/false albacore/ little tuna.

False albacore is good fresh. I have not tried it frozen nor have I tried it whole. The only thing about them is proper preparation. Eating the large part of the bloodline is like licking a rusty nail. You do have to waste a good portion of the dark red meat after cleaning yet is a great tasting fish. I did a taste test with the family and the somewhat sweet tasing false albacore was preferred over the blackfin tuna.

......We eat Bonita here in Old Naples Florida ( Way down Southwest Fl. ) BUT ! We give the darker bottom part of the fillet too the birds...It isn't the best fish taste that's for sure, but it is eatable..... Old Naples Florida🌴🏁

We used to catch them in Panama City. We never kept one. I wish I had just to try them. Wonder if they would be good incorporated into sushi?

I think of Bonita as I do Blue Fish. Marinate it in enough acid based items, like lime juice or Italian dressing and it makes it edible. Edible is OK, not my first choice. I don't care for fishy tasting fish. The Italian dressing or a mix of lime juice and apricot jam removes a lot of the fishy taste, but takes hours not just an hour.

The bonito you caught are a different species then false albacore or albacore which are also called bonito. You guys occasionally catch false albacore. I think brad caught one a few months back. They are a white meat fish and what most canned tuna is made of.

I find poaching and then finishing strong tasting fish under the grill subdues the flavour and makes it more edible.

I put it in a frying pan , put water in so fish is just covered , cook it slowly so the water is not quite boiling so as not to damage the texture, put knife in to visually check when the flesh is cooked through, then drain the water off and finish under the grill turning it over to brown both sides . Also it makes very oily fish less oily . I use this method for smaller whole fish with skin left on but guess it would work for fillets also. bon appetite ! @@aniketbelgaonkar4870

I'm in CA & have never personnaly seen bonito on a menu. Everyone, including the sharks refuse to eat them. Back in the 60s & 70s they were everywhere when the water warmed. Then from what I was told the petfood industry went after them non-stop and the #s crashed. Now, most are 1-2#s (bigger off the Channel Isles) but they are making a slow comeback.
