sounds like the hole you drilled got too big for the bolt.

Try using a lighter touch. Sometimes turning the wrench very slowly will help the bolt to bite.

For wood, just use lag bolts that cut into the wood fibers. That's better than some sort of wedge anchor for wood applications.

You drill deep enough so it doesn't bottom out honestly, so you don't have to angle grinder off a bunch of the top threads sticking out
