Homemade Mango Preserves (Mango Jam)
This is an easy recipe. It is not too sweet and tastes much much better than a store-bought one. You can substitute mango with your favorite fruit.
Ingredients
4-5 ripe fresh mangoes (if using medium mangoes use 5 mangoes)
3/4 to 1 cup sugar (if the mangoes are not sweet use 1 cup sugar)
1/2 ts salt
Method
1. Peel mangoes and remove the seed and cut them into pieces.
2. In a large skillet over medium heat, add all of the ingredients, cook for 1 hour or until the liquid evaporated and mango softened. Stir often to prevent burning.
The color of mango should be darkened and the mixture is thickened.
3. Store in a glass jar and keep it in the fridge for up to 1 month.
4. If making a large batch, double or triple the recipe and store the preserves in sanitized jars and lids. You can keep it for a year at room temperature.
