Jets bleed off a lot of velocity when they pull maneuvers like this, and it's less about what the aircraft can physically do than it is the pilots ability to withstand the elephant sitting on their chest that is a high G turn. And as far as how fast they go from our perspective, they're rather easy to track. I know this very well, as I've been hearing Langley AFB sing me the song of freedom (jet noise) literally my entire life. I can confirm that it is incredibly entertaining to watch to flybois show off in the sky on any morning the weather is nice enough to fly in.
