Hello mam...it is written that lipid oxidation will be low at 0.3-0.45 water activity and you are saying it will be high...if i am not wrong. Kindly clarify. And I must say it was quick and informative video. Thumbs up for you .

mam what is the water activity for ice at 0 degree celcius? (Pondicherry uni- 2017 Q). options were- 0, 0.5,0.75 and 1.

Mam in which factors that can affect the water activity in food for growth of microorganisms

Higher water activity food tend to support more microorganisms; bacteria usually require water activity values of at least 0.91 and fungi at least 0.6. Every microorganism has a limit of water activity below which it will not grow. In general, if water activity decreases, micro-organisms with the ability to grow will also decrease.

Spoilage can occur in presence of water.. Then why only water don't get spoiled ?
