wash sweet potatoes really good, cut into cubes.
Put in boiling water for 3 minutes then take them out to cool.
Cut off the skins.
Make the syrup for your jars.
2 cups of water and one cup of sugar.
Fill your jars with sweet potatoes up to bottom of the rim.
Fill jars with syrup then de-bubble.
Wipe jars with vinegar put your lids on finger tight.
Put them in your water bath canner and bring to a rolling boil. process one hour.

Thanks for sharing. This was a wonderful video. I just bought 40lbs of sweet potatoes from local farmer and i want to can at least 10 jars. I ended up canning 16 jars.

I think the USDA has stock in the pressure canner manufacturers, lol. And seeing as what the FDA is approving as safe and effective in the last couple of years, I don't think I'll trust Any alphabet agencie's advice. I water bath can everything! Thanks for the video.

This is excellent info. My husband loves sweet potatoes but a bag often goes bad before I can go through them all. I’ll start preserving them this way when I have extras.

Thank you Michelle, I appreciate that you use the water bath method and also gave the FDA caution. Many, many generations have used the water bath method successfully and oven canning as well. To reduce food waste and take advantage of sales I may only can 2 or 3 jars at a time.

I would call it original canning. I'm only canning items that I can't find/buy canned at the grocery store. I just canned 8 pounds of sirloin roast and 8 lbs of boneless skinless chicken breast for the very first time and they all turned out perfectly. I've also made pickled whole jalapenos. And, now, I'm here for this recipe which I can't wait to try. Thank you so much for sharing and God Bless.

I had about 10 lbs of sweet potatoes and thought about water bath canning them. Asked the Internet and you came up. Somehow I missed this last year. I canned potatoes from the recipe that Makeitmake did. And I also saw that you done this recipe also. I really didn't want to do the pressure canner method this year. Glad you made this video. Thanks.

I just found your channel today. And I love Lelana from MakeItMake. She said in a video yesturday she is going to be waterbathing pumpkin in her upcoming video. I'm an old school canner from how I was taught from my grandmother and she never owned a pressure canner. Also I know the Amish have always always done the WB method on everything and so many people are unskilled to the point of ignorance that they will constantly attack people like us who have the true canning skills before the USDA came up with their own recommendations and scared everyone into this vacuum chamber to believe the only safe way to can is with a pressure canner. People don't understand how families preserved food before pressure canners even existed. In other countries they water bath everything as well. I'm so glad I stumbled on to your channel.im looking for more like minded skilled women like myself who understand the old ways that actually work, are safe, and we can learn great things from each other. Best of all, we are more highly skilled because we can do WB methods, and integrate all the other methods into our skills with confidence. Thanks so much for your video.

Thank you for this great video..yes I watch makeitmake great cook also, but also watch a Mennonite Lady call homesteading with the Zimmerman's she is ready good with all her informaiton, from canning, cooking, gardening & living on a farm love, love her videos. You are also a love channel, only like for makeitmake though.

I was wondering I'm new to canning butternut squash how long would you have to water bath that thank you

I haven't canned butternut squash but I would guess the time would be 3 hours. Most things I have found through Amish canning books process 3 hours. Sometimes there is a shorter time for a few things. I waterbath potatoes 3 hours so I would waterbath butternut squash 3 hours.

I haven't opened a jar yet. I will probably use them for Thanksgiving. If they are anything like the potatoes that I canned I'm sure they will be great. My potatoes turned out perfectly.

Hi, just wanted to get back with you on the texture of the sweet potatoes. I opened 2 jars for Thanksgiving and they are mushy. I used them in a sweet potato casserole, they are perfect for that.

@@michellesgarden thanks for getting back with me. That's how mine do everytime. I only use the canned ones for sweet potatoe souffle. My squash always did the same until I found a recipe for canning squash for frying later( which of course if not USDA approved) . Thank you again I will keep looking for more ways to preserve then. I have right now about the hundred under the house lol.

I cover my jars with an inch and a half of water above the jars in the canner. Put my lid on and begin the process.

I got this recipe from a channel called makeitmake. It's an Amish recipe that calls for 1 hour process time. I think that time is for pints and quarts.

I'm not really sure on that. I got my recipe from a channel called Makeitmake. It's an Amish recipe. Personally I don't see why you couldn't. Maybe add a teaspoon of vinegar.

12 to 18 months is a recommended time in my opinion to use food that I have canned. I follow a fb page called (waterbath canning only no pressure canning aloud ) and most people will say as long as it's sealed it's good.

What if I want to use half the sugar? Would that change the processing time?

The processing time stays the same because the sweet potatoes are a low acidic food.

I'm not trying to be mean, but please let me inject a thought with great care and concern. It takes a temperature of 240° minimum to kill botulism spores, water bath temps can only reach 212°. No matter how long or hard you water bath or steam it will never reach the required temp of 240° without pressure. Have you ever known anyone who survived and seen what they go through? 😢 I hope you and your family the best...

No I usually blanch my corn cut it off the cob then put it in freezer bags to freeze. But I have heard of people canning corn. I'm not sure what the process is.

Take some water out of the canner. Only 1 inch or 1 1/2 inches above the jars. I've not had that situation happen before.

Pressure canning has been around about as long as water bath canning sometime in the 1900's. Its not about what you choose to do, but what is required of what your canning. Obviously, you'll haven't heard of anyone dying or becoming very sick because of botulism . If you learned water bath you had better learn to Pressure can, a FAMILY member life may depend on it!!!

Please don’t fear monger with lies! WB canning is the original canning it has been around atleast since the 1700s, though there are sources that put canning in glass jars even as far back as ancient Egypt and China. Pressure canning (safely) has only been around since the 1900s and has only been pushed by the US government around the 1960s/1970s, which is why you can find Ball & Kerr Canning books prior to that period that have both WB & Pressure Canning times for everything you could possibly can, including meats and other low-acid foods. It’s as safe then as it is today. Also, it is still the only canning method known in most of the world where the cost of a pressure canner is prohibitive or not even available for sale.
