I love to make my own mixed chili beans. I mix pinto, red, northern and black beans with garlic, cumin, onion, peppers, sometimes some tomato and chicken and tomato bullion.

I do the same thing with the egg carton. My mom taught me that, so when you go to grab it, it doesnt slip out of your hands and fall.

I grow black eyed peas every year. I planted 8 peas this year and got two pounds of dried peas. I grow them up a trellis and pick the peas when the pod starts to yellow and bring them inside to dry. They are pretty easy.

Hello Michelle, thank you for an excellent tutorial. Question - What is the advantage/purpose of canning dry beans vs storing beans in the bag, and then opening the bags and using as needed? It seems to me the cost of the jars/lids, and shelf space would be more efficient than canning. I'm a newbie, so I must be missing something, and this is no critizem at all. Again thank you of a excellent tutorial.

That's a great question. I guess for me personally I see it as you would a can of beans on the shelf just open and heat. I also have dried beans that I use . I guess it all comes down to preference really. It's nice to have alittle of both. Thank you for taking time to watch the video.

If you’re learning to can too and you are disabled like like me and can’t stand and watch a pot that long I have experimented and used a crock pot (3 pints fit) it worked well. No siphoning

I may have missed it but How much beans would you use for quarts? And did you soak them any before adding them to your jars for just sort-rinse-and go?! I love your videos!!

I don't usually can beans in quart jars but if I did I would use 1 cup of dried beans to start out. After processing you can tell if you need more beans the next time you can them. I have seen people par boil first to get some of the gas out of them before canning. I just rinse and put mine in the jars then can them.

What is the consistency of the beans when you open it after a few months or year? Are they mushy? I'm very new at this and debating if I want to can and vacuum seal or water bath beans? No one seems to say how the canning turns out. "Make it make" showed her viewers canned ground beef done three ways after opening. Your video is very good and your calm demeanor, lol ... thank you!

3 hours. You can mix quarts and pints together and all of them cook for 3 hours.

I use all of my canned foods in a 12 month time period. I have heard the older generation of water bath canning say as long as the seal is NOT broken it's good.

I just got myself. Fresh pintos and fresh black eyed peas. Please tell me if I use the same process for fresh pintos as dried pintos. 1/2 cup per jar. 3 hour hot water bath. I also just found a huge enamel canning pot. At goodwill. 8 dollars. So Ive washed and cleaned my beans. I will wait for your answer. Thank you

I think next time. Maybe if there fresh pintos we should put one cup of fresh pintos. I did everything right. Hot rolling boil for three hours. And when done. Jars only was full halfway. Ok bingo. I did fresh black eyes. And it worked. Cup and 1/4 to 1/2. Peas. And it came to inch from top. Used a different canner. And they came out perfect. I'm finding out that jams and jellies I've done all my life. This is all new to me. I've got 6 perfect pints. Another question would be. Why remove rims. I inhereted my late families canning supplies. So I would like to do broth also. Prices are soring here in southern Texas. But we will make it. Thanks for all your patience in me trying my first hand at other things besides jams jellies. Thank you

You can keep the rims on. Just remove them and clean your jars really well then put them back on. I forgot to clean a jar of salsa and when I took it off the shelf it had green mold growing on the outside of the jar from the liquid seeping out during processing.

You do you but boiling for 3hrs kills damn near everything. And if you start with clean sterilized jars and lids you aren't introducing any bacteria to begin with.

So you would rather water bath can for 3 hours rather than boil beans for 30 minutes in a pan to rehydrate them, then pressure can for 75 minutes? I would pick the shorter time and be safe from botulism.

I thought the gal from make it make put a tsp of white vinegar in the jars? For all the "thats not safe folks" did you know people have been preserving food longer than there has been a department to tell you how? Also, there are many peoples and many other countries in the world and they dont have access to or find the need to pressure can and they eat without getting sick so... Lastly, the departments giving the advise have only "tested" the ways they recommend, any other method has gone untested and as such been deemed less than safe because someone official didnt say so. However, that is just their opinion and they have zero proof one way or the other. Right now everyone has a choice of methods but should that ever change at least now you have a back up. Have a peaceful day!

That's a myth. Amish water bath can this way forever. My mom her mom did this the same way. Ever saw a pressure canner explode. I will always water bath everything. Been doing this forever. I'm 63.
