About Pai:
Pailin “Pai” Chongchitnant is the author of the Hot Thai Kitchen cookbook, co-host of a Canadian TV series One World Kitchen on Gusto TV, and creator and host of the KZbin channel Pailin's Kitchen.
Pai was born and raised in southern Thailand where she spent much of her "playtime" in the kitchen. She traveled to Canada to study Nutritional Sciences at the University of British Columbia, and was later trained as a chef at Le Cordon Bleu culinary school in San Francisco.
After working in both Western and Thai professional kitchens, she decided that her passion really lies in educating and empowering others to cook at home via KZbin videos, her cookbook, and cooking classes. She currently lives in Vancouver, and goes to Thailand every year to visit her family. Visit her at hot-thai-kitchen.com

When I was in Thailand, I ordered this dish everyday. It is a must-have. Unfortunately, I've been unable to find it in any American restaurant. So glad I found you

Apparently, water spinach is considered an invasive aquatic weed in the US and farmers need special permit to grow it. I have honestly never seen it for sale but it looks delicious.

Just grow it yourself. Seeds available on Amazon. It grows like a weed! Requires a lot of water but otherwise easy peasy!

It’s available in every Chinese or Southeast Asian market in the US. It’s also only certain states that have restrictions on growing.

This is my go to dish whenever i go to Thai restaurant in Malaysia… it’s cheap, it’s healthy, it’s delicious, with rice, nam prik gapi and thai omelette is a perfect meal…❤❤❤❤❤

In Malaysia this vegetabla we called it Kangkong Chinese Word is Kong Xing Chai空心菜. I really like the way you cook Asian Style.

I had this stir fried Morning Glory cooked this way the first time at Hua Hin. The taste was so good and tasty, far different from the way I am used to with soy sauce, vinegar and garlic. I was so impressed how good the taste was, I quickly asked the cook what were the ingredients/condiments he used. Yes, it was the fermented soy beans that gave it a distinct taste.

This is one of my favorite dishes from my childhood. I miss it so much! It's almost impossible to find water spinach in MS where I live.

I usually add some pounded anchovies or dried shrimps to enhance the flavour. After seeing your video, I'm craving for a plate of stir fry water spinach! Yum!

Looks good!!! I want to make this! We make a similar dish at home with water spinach. We pound the garlic, chili and dried shrimp into a paste, stir fry with the vegetables and seasoned with fish sauce. :)

I had this at a Thai restaurant in Liverpool, I had mine with pork belly, it was superb. It was quite spicy to I added some sambal into the sauce, and yellow bean paste because I couldn't find anything else. You can't find Morning Glory in any regular shops here so I've used choi sum and regular spinach to make it, I thought it was a pretty good substitution

Oh my goodness thank you Pai for this recipe! This was a favorite dish while we were in Thailand! I've never seen morning glory where I live though:( but I will look for a similar vegetable to try :)

My mom always made this with cauliflower (a little longer cook time) and sugar snap peas or bok choi like Pailin says, so don't worry... it's gonna be 99% as delicious, I promise.

If it was me I'd cook the stems first so that it's a bit more tender, and put the leaves last.. but that's just my preference, I like my stems a cooked..

I tried this when I visited Thailand for the first time (mostly because it just looked nice and green) and ended up ordering it at almost every place that had it. It may actually be my favourite Thai dish now. Unfortunately I can't find water spinach where I live and I haven't found a substitute, especially because of the hollow stems.

For those reluctant eaters for whom pak boong (Morning Glory greens) seem a little challenging, TRY THESE! I was reluctant too, until someone ordered it just as she describes in the video-as a side dish to an otherwise meat filled meal. They are so flavorful, mild and not bitter at all. A wonderful foil to the rich meats.

Mushroom oyster sauce is available in every Asian market and online in the US. It's not as salty and it taste better than replacing oyster sauce with soy sauce.

Ah! you're back in Thailand! Was wondering how on earth did you managed to get water spinach over the other side of the world. Just to share, this veg goes extremely well with cuttlefish (the orangey kind, not the normal white fresh kind) paired either with thin curry sauce or black shrimp paste.

you can find it in most Asian markets. i live in Washington DC we have so many Asian markets & i always see water spinach even year round. if you live in a diverse area that has plenty of Asian markets you should find it easily. from New york, New jersey to Virginia i always see it sold in Asian markets.

Ingredient list: 150 g water spinach, cut stems into 2-3″ pieces, leave the leaves whole 5-6 cloves garlic 2-3 Thai chilies 1 Tbsp oyster sauce 1 Tbsp Tao Jiew (fermented soy bean paste) (Also see Rad Na and Kao Mun Gai videos) 1/2 Tbsp soy sauce 1 tsp sugar 1/4 - 1/8 tsp white pepper 2-4 Tbsp water as needed 2 Tbsp vegetable oil

Hello from Southern California. We just found your channel while looking for interesting tofu revipes. Thanks so much for taking the time to demystify the world of Thai cuisine for us. And a special thanks for pointing out vegetarian options. The potential "hidden ingredients" that are not vegetarian kept us away from Thai food. We are empty nesters and want to expand our culinary repertoire and new cultural understanding. There are so many muti-cultural markets here in the Los Angeles area. But we had no one to walk us through any of these ingredients. Now we have a delightful young teacher! My daughter is a " Pescatarian", so she wouldn't mind the seafood based condiments. Hi! I'm gluten-free and The onyl brand of Tao-Jeiw I can find has Wheat Flour in it! Do you have a recipe? I'm sure it can't bee tohard to ferment my own soybeans? Does anyone ever make thier own? Thanks! :)

Ask the resto for no chili or less spicy. If you cook for yourself, just leave those chili. It was my family recipe when I was a kid. However I prefer the chili one when I grew up.
