They prepare most of the ingredients in-house. So don't get fooled, in this case plating is just the easy bit. If some critics agreed that is the best restaurant in the world in 2013, they must be doing doing a few things right.

The last one I would have used a black plate or plated on dark stone. You can barely see it. It's white on white. As far as everyone saying that it's crap, unless you've eaten it, it's hard to judge. It probably comes down to texture and taste, perhaps a bit of whimsy and play on childhood favorites like cotton candy. Who has a Michelin star here? Not me. He has 3. Just sayin'.

Hiding the ice cream inside the foam create a surprise to the customer palate, layering the textures and the flavors, and hiding the foam and the ice cream inside the cotton create another extra layer. I would be really pleased to visit your three michelin star joint anytime though.
