Garnt is correct about the chicken and bone stuff. But he just can’t explain it very well. Chicken breast is thicker because birds are naturally strong enough to fly. But they don’t do it often, so there is less blood flow, which gets rid of the moisture in it. the legs on the other hand, has more blood flow and thinner in meat. Which allows you to cook it without losing the moisture. Not only that, but the legs have bones, and those bones get really hot really quick, which can actually cook the meat as well, allowing you to cook for less time, and a more even cook. And those bones, as it cooks also releases a lot of nutrients, because that is where they hold extra nutrients in the body. And these nutrients make it taste better, because our body naturally makes things necessary to our body taste better. Therefore, thighs are better than breasts. But no one will ever read this, so idk why I typed this out. And I’m in high school, so maybe I actually don’t know what I’m talking about. But I still stand with thighs are better than breasts. And they do taste different

I don't think that bones heat up quickly to cook the meat faster. It's just additional mass that has to be heated up so I think that bone-in actually takes longer to cook. Now, when it does heat up I do believe it will lead to more carry-over cooking but that's about it. In terms of flavour and nutrients, idk, I always eat boneless because I'm too lazy to work around the bone.

This is one of the few times I agree with Garnt on the chicken. Different pieces of the chicken definitely do NOT taste the same. Also, the bones enhance the flavor of the meat because there's flavor in the marrow that comes up during the cooking process. This is one of the main reasons that bones are used to make soup and broths since the flavor comes out during the boiling process.
@youtubesucks3490 Жыл бұрын
Id argue thats most different parts of animals. Yeah some parts are really similar, as it should be same animal and all, but personally most cuts or parta of anything usually have a somewhat unique thing compared to others.
@ratdoto21483 жыл бұрын
Garnt is right, lean refers to the fat content of meat. Chickens store almost all of their fat in their skin, so the whole bird is lean. The reason the breast is 'leaner' is because it is the largest piece of meat on an animal where the fat is in the skin, so it has the largest proportion of meat that is away from the skin. People would not consider pork lean either, but it is. If you trim away all the fat from pork the meat itself is not marbled; like chicken, so it is low fat and thus lean.

Chicken has two different types of meat, white meat (breasts, wings) and dark meat (thighs, legs). Dark meat has more fat in it, and does have a different taste and texture. Wings, and other boned meat, also have a different flavour because the flavour from the bones is leached out during cooking. Think of meat broth, usually you use bones to make broth, because that is where all the flavour is. Same concept applies.

The boys are arguing about the wrong thing! It's not on bone versus boneless, the real argument should be about dark meat versus white meat. Garnt is correct in that dark meat is actually both juicier and more flavourful because of it having more red fibers. White meat is leaner, making it much easier to dry out during cooking, and is milder in flavour. Connor and Joey are entirely incorrect in saying that it all tastes the same. Dark and white meat not only tastes different, but are visually different as well.

This podcast needs a vocabulary lesson xD Meat = is the mostly muscle of the animal. You are eating the animals muscles for the most part. You consume more more than muscle but for the sake of the conversation its muscle. Lean = low fat content. Thats all. A very skinny person can be lean, and a very muscular person can be lean. Leans means low fat to muscle ratio. When meat labeled as lean they are referring to the low fat content. You can expect that meat to be healthier, possibly less greasy, and possibly less flavorful on its own. "It taste better/worse because its part of the chicken that is used more" - hate to break it to you, but most chicken you consume sit in a cage their entire life or a.very small enclosure. Youre not tasting a exercised chicken xD. Youre tasting its diet and lack of exercise. "The big piece in a KFC bucket"= thats probably the thigh you're referring to. "Bone doesn't make a difference in taste" - it absolutely does. If a bone didn't affect flavor or didn't provide any benefits to the cooking process, why does broth exist? Chicken breast = a lean cut of the poultry obviously coming from its breast. Its low fat content makes it healthier but less flavorful. Its a popular cut do to the fact its texture is consistent and doesn't require removing any fatty pieces or tendons. Its ready to cook immediately Thighs = dark meat. Known to have a higher fat content and regarded as more flavor and more moist due to the higher fat. Dark meat and white meat absolutely have a difference in taste. People usually like boneless because the texture is less offensive and its easy to eat. People like bone-in/dark meat because its more flavorful and consistently more moist.
@thickestofmints40583 жыл бұрын
I’d add the note that breast isn’t even ready to cook right away. Since modern chicken breasts are so large, you have to butterfly them like crazy just to get them to a thickness that doesn’t get bone dry once fully cooked.

THANK YOU, also aromatic compounds tend to be soluble in fat, so fat literally stores flavor: since thighs are the fat part, they are the most flavorful part of the chicken. I was going insane listening to them
@lostnoire20363 жыл бұрын
I agree with everything you've pointed out except the bone portion of it. Leaving the bone in doesn't make a difference in taste, but it does make the meat juicer and more tender. Your point about broth doesn't work because the bone matter itself is largely flavorless stuff that takes a long time to dissolve in water or fat, and thus doesn't contribute much to your meat, flavor-wise. The marrow is locked deep within the bones and can't be extracted efficiently unless the bones are cracked or sawed in half which leaves us with some very ugly fried chicken. Also forgot to add were talking about fried chicken so you have to keep in mind that were frying the chicken and not cooking it in any other way.

It's not my opinion that breast is worse that's not the point lol the flavour of breast is lack list compared that's all the actual meat itself is in my opinion better in many ways for different dishes but the argument yet again in not diversity of the chicken or what I prefer or you prefer it's what actually is the stronger and more flavourful of the two.

If you've ever prepared your own chicken you'd know Garnt is right; the breasts contain a LOT less moisture than the other parts, and different parts of the chicken have different levels of fat, skin/meat thickness and texture. Of course, I can't really comment on fast food chicken since I rarely eat that stuff but it's 100% false to claim that all parts of the chicken taste the same.

The thigh is the best piece with the most flavor. The biggest problem though is most cook all the parts at the same temp for the same time, and since the thigh takes longer to cook, the breast gets dried out.
@Hai435613 жыл бұрын
The thing is Connor used to make chicken and broccoli everyday. Did he never try using chicken thigh instead of breast? It would be obvious the difference between the two after cooking both. (chicken thigh is way juicier)

Garnt is correct that the bone changes flavor to a degree. I've worked with chicken in commercial restaurants for several years, and bone can add flavor, once it's grilled or baked. That is why wings tend to be battered, baked, and then fried. Boneless wings make it easier to just batter and fry, not needing a bake, though this is done to make the breading stay on the chicken. The bone makes the cooking process longer, because it's a cool point the meat is attached to. Breast is lean, easier to prep, cook, and garnish. Breast is more moist. Simply because it has more muscle to hold moisture
@ReubenXR3 жыл бұрын
Also broth is mostly just made from leftovers which is mostly bone...thats where the flavour comes from.
@treyatkinson75643 жыл бұрын
@@ReubenXR yeah, you also have cartilage, spices. Broth is a pain in the ass, personally. I don't know, I hate working with or around bone
@jaega42473 жыл бұрын
Thanks for the insight. I personally don't like messing with the bones when eating, but I know they can add a lot to the flavor, and that some people actually do eat the marrow and stuff as well. Not sure about the breast vs thigh discussion. There's a lot of muscle in both, so non of them are actually right/wrong on the matter, but those are also different types of muscles that probably does different things for both taste and consistency. Would love to hear someone's take on that (who actually know what they're talking about).

That is if you cook the breast properly. I can't be bothered so I just stick to dark meat
@treyatkinson75643 жыл бұрын
@@voltz8945 hey, I'll never fault someone for choosing to not cook breast. I found it to be a pain in the ass at first to keep properly moist, but I'm better after so much work with it. Dark meat has its place, with the fried wings and heirloom chicken.
@changg50893 жыл бұрын
When you order boneless chicken it is generally a combination of thigh and breast. However chicken thighs are well known to taste better due to the higher fat content. The fact breast meat is leaner makes it less tasty. Technically the tenderloin is part of the breast, which does add some value but the main reason breast is used is due to it being healthier. Overall thighs are seen as better in terms of taste by society and the culinary world, with breasts being preferred in some dishes.
@catfishrob12 жыл бұрын
Yeah, chicken breast is good for certain dishes because sometimes you want something more bland to work with so you can give it more different flavors and not be overpowered. Or if you want to use a different kind of fat.

Just your resident candle expert here... to prevent tunneling you need to burn the candle for a while for a pool of wax to form beneath the flame so that it will harden to form a level surface. Burning for a short period will cause tunneling regardless of candle quality. For large candles, there are the Chad 3-wick candles that helps with a more even burn

Darker meats or fibers are for long term use, which is why there is more nutrients in them, to sustain whatever motion or position they're in for extended periods of time. So for chickens, which don't fly, their breasts are white meat because they don't really do any prolonged physical activity with them, same for turkey. That's why geese and ducks have breast meat that is dark, they do fly so they need the ability to sustain long-term motion with their breasts to stay in the air.

Chicken Breast pieces are the driest, fibre-y and least fatty part of a chicken thats a gastronomical fact guys. The bones do help in the tasting process even in fried chiken. And dont forget that both Connor and Joey arent fond of fat in their meat hence why they like the breast piece more, its the least juicy part. Dont worry Garnt I feel your pain and the pieces do taste differently.
