I use to be a short order fry cook at a little drive in up in Madera CA. I had to prep and cook the french fries. I put them through the veggie chopper, put them in a peeler too. Pre fried them and then stored them in a walk in refrigerator. Then fried them the rest of the way. Not difficult, just a lengthy procedure!

I was in the Fry business for 25 years......5 Guys fries are ok, but.....not consistent especially for folks that know how to do them properly......peanut oil must be continuously rotated and fryers cleaned daily.....5 Guys problem, fries are not their specialty, burgers are so thats their focus, in addition 5 Guys are also at the mercy of the market, with the new crop, the old crop and the fact that all potatoes due to their starch and sugar content cook differently, therefore you must adjust for consistency......

The first time I had FIVE GUYS fries, it was a very new experience for me. Before then, I did not know what Boardwalk style fries were, as there are no other places that I am aware of in Texas that offer this style of french fries. That mashed potato like inside, and yet a firm outside, makes Boardwalk style French fries. I have come to like Boardwalk style fries better than traditional crispy fries. Try putting a splash of malt vinegar sauce into a 2 ounce side cup at the condiments bar, then fill it halfway full with ketchup. Use a fry to stir it up to well incorporate the malt vinegar. Makes a great ketchup enhancer, and a great fry dip!

I'm assuming they use a vinegar water for their boil. Otherwise without the acid present the pectin structure in the potatoes breaks down in the boiling and they fall apart like boiled potatoes.

I don't think do. I believe they either pre fry or blanch them, but also they presoak them which Russ the fries 🍟of the starch which ruins the perfect fry process. I do a semi -similar home fry and never add vinegar but need to try peanut oil, b because olive oil has a minimal after taste, canola oil less but leaves more particles for the following batches. Enjoy, love fresh FF!

Not sure why so many "eh they're ok" posts, Five Guys fries are made fresh every day, not frozen like everywhere else, and have a lot of flavor that's all their own. Then again, maybe it's just that the public is conditioned to prefer homogenized mass-produced junk like the way waxy Hershey chocolate remains popular when it has butyric acid, the same substance found in vomit that gives vomit its "flavor"....Burger King parent company took a beloved Canadian institution like Tim Hortons and rung it through dirt in the name of profit and greed, and the clueless board wonders why sales haven't been what they thought they would. Stick with fresh where you can, folks. Franchisees may not have warm and fuzzy feelings towards the Murrells, but it is still a private family-owned company that keeps up the quality like Chick-Fil-A, the #1 in fast-food sales per store that isn't even open all 7 days of the week.

Its because the locations are rarely consistent with their cooking process. An order of Five Guys fries that’s made according to standards can’t be beat. You’re not likely to get that, though. They have to shake the baskets about 30 times while frying and perform perfect pre and final cooks under pressure. That results in neglect and bad fries. don’t blame them, it’s just what it is

I like how they put their fries in a cup and burger or hotdogs in a kitchen foil paper it... there's something so simple about it, other brands put a logo in their food packaging, but they just stick to using things that are simple that have no logo on them.....how ever their milkshakes do have a logo, but overall their food packaging is simple.

A lot of that has to do with the market.....if Idaho’s aren’t available the purveyor sends a substitute with a competitive price, since all potatoes cook differently due to starch and sugar content, frying adjustments must be made, if not you get what you are describing.....
