Those shore prawns, as we call them here in Portugal, are my favourite sea food and believe me, when it comes to that subject I know what I’m talking about. The best tip I could give you, concerning cooking the prawns, is for you to boil them in sea water, and imediatelly after taking them out of the boiling water dive the prawns in sea water filled with ice cubes for no more thatn a few seconds, in order to stop the boiling process very suddenly. The prawns meat will end up having a kind of an almost crispy texture that I’m sure will amaze you.
