This is the day we got in trouble in China for being too adventurous. It was our first time trying the famous Sichuan Spicy Hot Pot in Chengdu, China and we were left wondering how this is even legal? lol
Alright, aside from being too spicy it did pack a lot of flavour and it was very delicious. We can not wait to try the hot pot again, hopefully not as spicy next time.

When eating local hot pot in Sichuan, you should choose whether it is spicy or not, because the spicy food of Sichuan people is the same as the spicy food of outsiders😂. If you choose medium spicy, it is very spicy. Usually there is the kind of hot pot that is half spicy and half non-spicy, and they don’t put chili pepper in the soup on the non-spicy side. People who don't like spicy food can pick up the meat from the spicy soup side and rinse it in non-spicy soup, so that it won't taste so spicy. The condiments you choose at the condiment table need to be stirred with the sesame oil given to you by the waiter, the meat needs to be dipped in the condiments when taken out of the hot pot. This is more traditional.

doing the dipping sauces all wrong. It's never a singular thing. There different varieties of mixtures. Even the sesame sauce type you still want a bit of soy, green onions and other ingredients all mixed together. In the soy base one, should use soy, vinegar, splash of sesame oil, green onion, garlic, chili's, cilantro, sacha sauce or beef sauce they seem to call it there.

All of your other comments are good. You all are getting better at hot pot eating except for the dipping sauce part. It is super common for hot pot eaters to blend a variety of the sauces and condiments into a bowl and stir it up. Subsequently, you take the meats, seafood, noodles, vegetables, etc and dip the food into your blended sauces. For example, I will add the following sauces and condiments into my bowl; peanut sauce, sesame sauce, oyster sauce, garlic, soy sauce, vinegar, green onions, and chili peppers and stir thoroughly. If I am feeling more adventurous, I will crack a raw egg into my dipping bowl as well. Enjoy Chengdu and your panda video was cool. Finally, try go and see the Avatar movie inspired park.

You've reminded me of my first hot pot experience in Chongqing ten years ago. Back then, a few of us from Guangdong didn't know how to eat it properly, just like you in the video. We directly ate food from the spicy pot, which was extremely hot. We couldn't handle the spice at all. Later, a local classmate showed us the right way to eat. I noticed they provided you with two small bottles of oil, which you can use to make a dipping sauce-garlic, green onions, and small chili peppers... mix according to your taste, and definitely add the oil at the end. Stir it up, take the food out of the spicy pot, and dip it in the sauce you just made; it won't be as spicy then. Next time, you might want to try the 'Yuan Yang' pot, which is half spicy and half not, allowing you to enjoy different flavors in one hot pot meal.

So lovely you guys!! Sichuan hotpot dipping sauce is mainly made up of sesame oil with minced garlic (you can also add oyster oil to make the dipping sauce more flavored and salt). And each material's cooking time is different. Especially the goose/duck intestine just needs several seconds (you can remember the “formula”: put the intestine seven times in and out the pot alternatively) and the texture will be just fine!!

Once the hot pot boils, turn down the heat to low (knob for burner should be off to the side) otherwise the broth (vapour) evaporates too quickly and the broth becomes too rich (spicy, salty etc..). Avoid adding hot water as it water downs the taste of all the foods you cooked in the broth.

The preparation of hot pot dipping sauce is very important. Usually the hot pot is very hot, and the dipping sauce can quickly cool down without burning your mouth. If the hot pot is too spicy, the dipping sauce can also reduce the spiciness. Usually the dipping sauce varies from person to person, but usually there are sesame paste, fermented bean curd juice, chives, minced garlic, chopped green onions and other seasonings.

Hotpot is a unique Chinese cuisine, and the differences between hotpots from various regions are significant. However, the basic composition remains the same, consisting of a soup base, meat, and dipping sauce. These are the fundamental elements of hotpot. Generally, meat only needs to be cooked in the soup for 10-30 seconds, while vegetables require a longer cooking time. The Sichuan hotpot you tried is famous for its spiciness, a challenge even for some Chinese people. Currently, the mainstream hotpots in China include Beijing hotpot (mutton hotpot), Sichuan hotpot (spicy hotpot), and Chaoshan hotpot (beef hotpot). In addition, there are also some regionally popular hotpots across the city. Beijing hotpot is characterized by its water base. The meat are very fresh, unseasoned sliced lamb or beef. The choice of vegetables tends to be more cabbage and tofu. The traditional dipping sauce is seasoned sesame paste. With Northern hotpot, you can enjoy the tenderness of meat and vegetables, and the rich sesame paste complements the light flavor of the hotpot. Sichuan hotpot is renowned for its intense spiciness. The soup base is made with a large amount of beef tallow, chili peppers, and spices. The meat is mainly marinated beef and animal offal. Because the soup base is very spicy, the traditional dipping sauce for Sichuan hotpot consists of sesame oil, garlic mince, and a small amount of salt. This dipping sauce reduces the spiciness and enhances the richness of the food's flavor. As Taz mentioned, it's a terrible choice to pair Sichuan hotpot with sesame paste. The reason why there is sesame paste on the dipping sauce table is that some Sichuan hotpot restaurants now also offer a non-spicy Northern-style soup base. In fact, you can choose a hotpot with half spicy soup base and half clear soup base. Chaoshan hotpot originates from the southeast of China. The soup base is usually a clear broth made from beef and beef bones. The meat mainly consists of beef and the locally characteristic beef balls. The traditional dipping sauce is seasoned soy sauce. The cooking time for Chaoshan hotpot's meat is very short, usually only 8-12 seconds, while the cooking time for beef balls is about 5 minutes. The elastic texture and light freshness are the characteristics of Chaoshan hotpot. Before enjoying the hotpot, it is also an important part of Chaoshan hotpot to pair it with a small amount of fried garlic and celery bits to taste the beef broth. In addition, there are also the rich and flavorful Guangdong pepper pork belly and chicken hotpot, the rice soup seafood hotpot with rice soup as the base, the coconut chicken hotpot from Hainan Island, and the sour and spicy hotpot with fermented soup base from Guizhou, which are also quite representative.

my favorite dipping sauce combo will be 1 Can of Sesame oil+ 2 spoon of garlic mince+ 1 spoon of oyster sauce+ 1 spoon of soy sauce+ 2 spoon of Vinger+ lots of coriander. the sesame oil will reduce the spicy level and rest of ingredients will brings more flavour of whatever u dip in with. Every time when I am watching foreigner eating hotpot with wrong dipping sauce, I feel that the whole experience of hotpot is not perfect, I really wish those restaurant staff able to helps them more.

The sesame oil is used to make the sauce for you to dip the food...😄 The typical sauce for Sichuan Hot Pot is: half bowl of garlic + one spoon of oyster sauce 蚝油 + some onion + some coriander + one or two spoons of vinegar + sesame oil until cover all the ingredients. And then mix them. It could relief the pain caused by chili and very delicious.

Sichuan hot pot is my favorite meal, yummy!!! When you checked the bill out, I heard the speaker says someone was charged RMB2,579, was that for your meal? I would never expect that expensive, since you did not order anything particularly as I can see in the video. Spend RMB2,579 in Chengdu, that’s actually for 30 people to have a good meal together.

lol Sichuan hotpot spice level is too overwhelming for an Englishman/Englishwoman. It’s so brave of you trying it out tho. The bottled sesame oil when added into your sauce will help mitigate the spiciness. Generally I’ll have one bowl of garlic+sesame oil plus another bowl of pure sesame sauce(the northern style such as those you normally get in Beijing) so that I can have two different flavors. There’s no fixed ways to enjoy a hotpot meal. Hotpot is all about freestyling, be your own little chef. So every hotpot experience should be an adventure!

Just like normal cooking in the kitchen at home, you use multiple items. To MIX a dipping sauce, you add garlic, sesame oil, green onions, peanut crumbs, soy sauce, maybe vinegar, all together according to taste. Like eating Jelly Beans, you mix up the color combination to arrive at a different taste, you usually don’t eat jelly beans one color at a time

You guys are close to understanding why so many sauces are different. There's still a big difference in food between northern and southern China. Traditional Chinese culture has always sought to harmonize food and medicine, and what you eat will have an effect on your body. That's why humid areas like Sichuan especially need the external force of chili peppers to get rid of the dampness inside the body. A lot of Chinese food may be a bit difficult for you guys, but try as much as you can is brave, appreciate your courage. There have been too many suggestions in the comments section, in fact, to eat in China, you can generously ask the owner, or even ask the guests next door.

It will definitely help you if I see you eating like this. There are two ways to reduce the spiciness of food in hot pot. All food taken out of the hot pot must be dipped in sauce. Northern China Plan: Sesame Sauce + Vinegar + Green Onion, southern China plan: sesame oil + garlic + vinegar, no need to add soy sauce, it will make the food very salty, I can’t accept the Chili Pepper Man’s plan: rinse with hot water before eating

Just a little curious, as you were paying the hot pot bill, the machine announced 2570Yuan paid. DId you pay 2750 for that mean? I hope not... By the way, the sesame oil they gave you are dipping sauce as well. Normally the locals would pour the sesami oil into the small bowl then add in some condiments like salt, garlic etc to flavor up the oil. It may look oily, but I find it quite good. Well, when in Rome...
