Recipe:
Spicy Salmon hand rolls:
1 pound salmon cut into cubes
1/2 cup kewpie mayo
2-3 tbsp sriracha
2 tsp sesame oil
Salt to taste
Finish with avocado, cucumber, or both
Sesame Crab hand rolls:
1/2 pound crab meat
1/4 cup kewpie mayo
1 1/2 tsp sesame oil
Trout eggs (optional)
Finish with avocado, cucumber, or both
Yellowtail and green onion hand rolls:
6 oz yellowtail cut into cubes
Thinly sliced green onion
Aji Amarillo Paste-amzn.to/3W71I5X
Nobu’s Aji Amarillo sauce:
2 tbsp aji amarillo paste
1/4 cup rice vinegar
1 tbsp soy sauce
2 tsp lemon juice
2 tsp yuzu juice
2 tbsp avocado oil
Sushi Rice:
3 cups short-grain sushi rice
1/2 cup +1 tbsp sushi seasoning
Sushi seasoning recipe:
1/2 cup unseasoned rice vinegar
1 tbsp mirin (optional)
1 tbsp sea salt
3 tbsp white sugar
1 4x4 inch piece of kombu (optional)
Directions:
1. combine rice vinegar, mirin, sugar, and salt in a small saucepan and heat on low until the sugar and salt have dissolved, remove from the heat and add the piece of kombu to the vinegar to steep.
be careful not to let the vinegar boil when you have it on the heat.

Here's a tip: Pour the rice wine vinegar into a spray bottle, then spread the rice on the nori paper and spray it. This method ensures a more even distribution, and you can easily add more to the roll itself. :) super smart.

It’s essentially the liver and pancreas of the crab so it’s incredibly rich and strong tasting, a little goes a long way but you can use it in to make a sauce or a crab bisque, seafood pasta as well.

Congratulations on 2 Million Subs!!! I'm so happy you made this video, and I also love how thorough and precise you are, as always. My family used to have a Japanese restaurant, and my uncle once told me that when cleaning the rice, in which the rice is rubbing against itself, also "polishes" the rice (in addition to releasing starch.) He said that it's nice to see each grain of rice individually and not shmushed together. And Yuzu?! The scent of Yuzu is so unique and lovely! 🥰

Congratulations! Your channel is so good that i had no doubts you'd get to 2M. When I was growing up, my mom used to make futomaki at home for parties. She always had me fan the hot rice while working the sushi vinegar in. The point of that was that the hot rice would absorb more vinegar and give the roce a glossy sheen. It also prevented the rice from forming wet clumps. By the time we finished adding the vinegar the you keep fanning and tossing the rice until it was room temp. Thanks for all of your prep tips! Maybe you'll find this one helpful.

Grats Sonny on 2 million. I've not been brave enough to try sushi, yours look great. The only ingredient here that I would not eat is the farmed salmon. I'm in Australia and have cut salmon from my diet after watching documentaries on the salmon farms down in Tasmania.

We make sushi bowls at our house. It's really just a California roll that you put together yourself but we don't make rolls, we get the toasted seaweed snacks and you just build a little tiny sushi roll on top of your toasted seaweed. Super good and the whole family loves it. I also don't like the flavor of regular Nori. The Toasted ones that are snacks have different flavors, Teriyaki being the best. Wassabi being the worst

The few towel rice taps is why I'm here. That was FANTASTIC. I usually use a small hammer that's just a regular hammer but half of the handle is sawed off. But yes, that is almost enough force to dispel the rice. But in all seriousness, rice loves the bowl lol. I appreciate the energy >:)

You might want to consider toasting your Nori before rolling your sushi. It will stay crisper and add more flavor.

I learned to make sushi years ago (just sushi obsessed). Once I discovered Korean gimbap and Japanese onigirazu....game changers! There are no rules outside of the rice and nori.
