Get a collapsible sink and use spray bottles. One with soapy water and one with rinsing water and paper towels to dry. Can all live in a drawer and can be adapted to inside or outside use and no need for install complications. Also less water use will help your water tank last longer.

It was an old britz van so it came with the fibreglass top with bed boards.

Just bought off Gumtree. Someone out of brissy was selling them. Just think of the dimensions you want than look for cabinets or buffet cabinets that meet those dimensions. There's heaps

I wouldnt mind with the sink placement.... If so, maybe make it removable, so you can just lift it up and bring it outside for comfortable dishwashing ;)
