I did the math, you have 372 hives and it matches the 100 bottle per hr 8 hive farm with the rate. Thing is 12.5 bottles per hour is all you need per hive. Which means the farm can run uninterrupted without bottle resupply for 46 hours when all dispensers are filled, not counting the 5x64 slots of the individual hoppers, which, filled up would mean roughly another 24 hrs worth of useable bottles. Including the hoppers it would run (rounded time) 69 hours. Nice.

I have a very good idea: Eventually you know that like film style mountains with secret beses in them? Sometimes the roof of that mountain bases can be opened. This would be a good building to waste your honey, slime(for giant flying maschienen) and your Time. 🤔 And than build a elytra shooting maschienes in the secret base. I would suggest manipulating some end gateways to spawn in the void outside the main island. Easy to keep spawn-proofed, nothing else contributes to lost framerate and the bees won't be a constant bother to leaving/entering the end dimension. It only takes like 30 minutes to set up a gateway in the void. You can find coordinates and/or chunk numbers that are checked to make this process fairly easy. I suggest making a world backup before activating a portal though, just in case something went wrong, since you can't fix it in any other way. This is a great way to store demanding farms with loads of entities.

But what's impressive is, you guys didn't use any kind of that technology, but still managed to reach 4,600 bottles of honey per hour! 👏

You can only respawn the ender dragon on purpose, by putting end crystals on four sides of the bedrock. It cannot respawn by itself.
