@@thesnowflakediaries5267Generally if you're freezing something like sorbet by just sticking it in the freezer and not using specialized machinery, you'll need to agitate it with a fork or scraper each hour or so until frozen. That way you'll get a fluffier texture instead of just a solid block of iced whatever. Maybe this is what op was talking about?
