Recently I made a PB&J beer as a experiment. It was crazy good and now everyone is asking for it. I made mine a slight sour though and mostly grains but used a good amount of corn sugar to keep it light. Mine was inspired by Brushow and Home brew 4 life.

It is 100% unnecessary to mix the honey into the must/wort/mead. The yeast will find it and it keeps the gravity lower during fermentation.
