On the last hand. Why not bid 1NT instead of the raise with only 3 cards?

1NT would be a reasonable alternative. The advantage of bidding 2S, is that most of the time, even playing 4 card majors, your partner will have 5 spades, and it is good to find this fit early: for example it is harder for the opponents to overcall over 2S, rather than over 1NT
