Guys a little project that I loved to do!

tiny iron drill

18" Weber Smokey Mountain Smoker/Cooker
some old steel sheet for the wood chips... you can use a smoker box like this as well...

The recipe for the ribs is:
Take nice spare ribs. Take the out of the fridge. Rub them with your preferred rub (I took a modified Guga's rub). Place them on the rack for 3 hours at about 110°C or 220°F. Smoke with wood (I took beach and some weber wood chips). After 3 hours put the ribs in a pan, ad a slight amount of liquid like water, fruit juice or even beer or so. Cover with foil an cook at 170°C or 340°F for 2 hours. Take out of the pan, place the ribs on the rack again and generously brush with prefered bbq sauce from time to time... ready to serve ... with potato chips and coleslaw - AWESOME

Great video. I did the same mod yesterday and it seems great. My burner is a bit bigger so keeping the temp low enough may be an issue.

Yeah, great! I took the smallest burner I could get to keep the temperature low… I have arranged an hour from about 95°C to 180°C… phenomenally- actually preparing some ribs right now 🤩👍 in it!!!

what is the point of doing that? basically you have outside oven, the point is to use charcoal

hey! It's just getting rid of dialing in the wsm and switching the temp range from high to low at the tip of your finger :) I love it! gonna do a 7 pound brisket tomorrow!
