but before the parchment paper he added oil to the pan and it splattered. he didn't add oil when he put the paper in.... did he need the paper? or should he not add the oil?

A few videos ago you showed how to use parchment paper to make meat patties by using a potato masher to form the patties between two sections of parchment paper. I take the parchment paper squares and do as you show, making this meat patty (although you are calling it bacon) in this video, and I want to say it works out great. Then I transfer it to the skillet to cook. It surprised me that the patties browned nicely on the paper. Tip: To make the patty even easier to form, I use cooking spray on the parchment bottom sheet and then spray the meat on top before adding a second piece of parchment paper when I flatten it. I remove the top parchment paper and then use it to make a second patty. I also make sausage patties bun-size for breakfast sandwiches. I wish I'd seen your spoon-pouring hack yesterday before I spilled tea all over the counter. I love all of your clever ideas. You make my life easier.
