Haniela's I have a question for you. I have let my cookies dry overnight, but when I go to mark some detail on the with edible marker. It melts the icing, and will cause it to be messed up. am I doing something wrong?

Clyde Day when you say melt the icing, does it leave a dent in the icing? I wonder, is it humid where you are, what edible markers do you normally use?

Haniela's They aren't the fine tip ones like you use. I got them at Michaels, and they have a fat tip on them. When I say melts the icing it turns it liquid again, and then it cracks around it. Not humid here at all. before I mark on them I feel the icing, and it is set up, and firm.

Hi Haniela, what brand of food dehydrator do you use? I really need one. Btw many thanks for putting out your cookie recipe, all this time I was struggling with store bought cookie bags, which didn't do any justice. These cookies are perfection :)

yankita88 I personally don't have a food dehydrator but I hear good things about Excalibur, one with removable shelves instead of stackable ones. Glad to be helpful. Hani

Hi Patty, for brushed it usually is thick so you can create textured effect. Occasionally for subtle effect thinner icing is also used.

Hi Hani Soon I will be making wedding cookies with brush embroidery and was wondering what number is piping consistency? For the embroidery and piping letters on cookies. Thank you

Jacky Munoz I don't really have a number in seconds for piping consistency, it's basically icing that softly holds the peak, it's not pointing up but it slowly bends down when you first pull the icing up with a spatula. For the brushed embroidery, I'd use either piping or even slightly stiffer icing if you want to have texture if you are looking for more subtle look then go for a little softer icing.

I wish there was a buttercream like icing foe these cookies...i dont like the royal icing.
