ezekiel tortilla- amzn.to/3q2D2Ov
BBQ oyster mushroom tacos
3 packages oyster mushrooms broken up into small pieces
1/2 onion sliced
Mrs Dash southwest seasoning - (or sub chili flakes)
1/2 cup bbq sauce- I used no sugar no salt bbq sauce, then I added a little date syrup in it for extra flavor, but you can use whatever bbq sauce you like.
Dry saute the onion plus the mushrooms for about 5 minutes til the mushrooms shrink down a bit and release some of their moisture. Add in the BBQ sauce and stir. Cook the mushrooms in the sauce for 10-15 minutes til most of the water/ moisture from the mushrooms is cooked off. serve in a warmed up corn tortilla topped with slaw and avocado.
Cashew slaw-
2 cups shredded cabbage
1 shredded carrot
1/2 thin sliced onion
1/4 cup cashew cream- (its just equal parts cashews and water with some lemon juice and garlic blended up)
1 tbsp apple cider vinegar
Fresh black pepper
Salt to taste
Avocado for serving
Egg roll in a bowl
- 1/2 onion diced
- 1 carrot shredded
- 1 cup plant crumbles
- 1 cup veg broth
- 1/2 cup cooked lentils
- 1 shredded carrot
- 4 oz shiitake mushrooms sliced (1 package)
- 4 cups shredded cabbage
- 4 garlic cloves minced
-
sauce
- 1 tbsp liquid aminos or low sodium soy sauce
- 1 1/2 tbsp rice vinegar
- 1 heaping tbsp date syrup or other sweetener
- 1/2 tbsp toasted sesame oil
- 1 tsp ginger paste
- red pepper flakes
PEANUT TOFU
4 tbsp peanut butter- I did 2 peanut butter 3 peanut powder
3 tbsp date syrup or other sweetener
3 tbsp rice vinegar
1 to 2 tbsp liquid aminos, soy sauce or coconut aminos
1 tsp garlic powder
Lots of red pepper flakes
2 to 3 tbsp water, enough to get it to mix up
2 packages extra firm tofu, cut in cubes and pat dry
On a baking sheet- bake at 375 for 25 mins, flip halfway
In casserole dish- 375 for 40 mins flip halfway
Serve with quinoa, shredded cabbage, carrots, green onion and top with more peanut sauce
Fave salad-
Romain and red leaf lettuce shredded
Chopped tomatoes
Shredded cabbage
Shredded carrots
1/2 thin sliced shallot
Lentils and quinoa warmed up
1 tbsp ground flax
1 tbsp hemp seeds
1 tbsp nooch
I used store bough dressing from acid league

One thing I've been doing lately is making different marinades for my tofu on my food prep day. I make the marinade & drain & cut up tofu and put them both in a stasher bag, give them a good shake & put them in the fridge. Then, I just airfry whatever type of tofu I want during the week. Some of the marinades I use: bragg's aminos, lemon juice, & garlic chili sauce; nori, apple cider vinegar, date syrup, garlic powder, & gochujang (in a blender) etc. It is so good and so fast because the tofu is already cut up and flavored!

Personally I don't care if you make the same thing it always gives me ideas on something. You are so lucky to be able to find the bargains that you do at that 99 cent store those mushrooms run almost $6 in my area. I don't believe I've seen you make anything that's fried but I have seen other vloggers make fried chickn out of them? As usual thanks for the ideas. Is your mom still following her new way of eating?

Thank you for your videos. Girl, these mans never answer enough. I love these series and your meal prep. Never sick of it. Keep on going. Unfortunately I get very bad gas and stomach ache of mushrooms. I love mushroom actually but now, I have to leave them out

I am a new viewer and got scared when you said you eat a salad 90 percent of the time but the legumes, quinoa, healthy fats from seeds make that a well balanced meal. Tahini and avocado are great for bulking a salad to make it more filling too.

Huh, didn't know peanut butter had satiated fat. I thought the only plant foods that had that was avocados. Learn something new every day

It does have some! not as much as real butter but I just like the pb powder cause it adds pb flavor without adding more fat! And it adds protein too

Why do you use stuff like date syrup instead of regular sugar? Is it because white sugar is processed using bone char or is it for some health reason?

Well blended dates is the healthiest sweetener because it still has the fiber intact which makes it lower glycemic! So date syrup isn’t as healthy cause it’s a bit more processed but I think it’s a second best option! That’s my thinking lol. And white sugar is too high glycemic

Great ideas. I make pizza using a pita as the base (not split open, just left whole) and bake on a pizza screen. Just a thought if anyone wants to try it.

I have been in such a rut with my plant based meals and your dinner videos give me so much inspiration! I made baked tacos with the almond flour tortillas from one of your previous videos. It completely changed my feeling about tacos and was so much more satisfying baked. I just love your dinner videos!

Not the "complete protein" myth again! Every whole plant food has every essential amino acid. After looking at thousands of amino acid tables I have yet to find a single whole plant food with a missing essential amino acid

Well yes all plants have all amino acids so I sort of misspoke, but some plant foods have a limiting amino acid or one that is lower than the rest, while other foods have a more balanced amino acid profile, for example the limiting amino acid in certain grains is lysine.
