I found that making the cream twice increases the creaminess. Allow the original mix to rest for several hours or overnight in the fridge and then re-blend for a few minutes. This virtually eliminates any residual grittiness from unblended nuts.

If you do it in the small 4 cup food processor it comes out perfect. Better then the vitamix and large food processor.

Blenders are funny and can't be judged by their appearances. I have a Blendtec that's 1550 watts with 2 blades and it does so much better at blending than my Ninja that's 1500 watts with 6 blades.

I made the basic cashew cream today, swapping the raw garlic for a head of roasted garlic for a roasted garlic cashew cream. I was eating the dregs straight out of the blender, it was so good. You are a gem, thank you for your recipes!

what i've learned from making hummus is that ice cubes are a secret to creaminess, i can't explain it, but i now made cashew-chickpea-garlic hummus with a standard blender, not super powerful, but added a bunch of icecubes (and a splash of water) and it made it soooo smooth and creamy!

I've been making cashew sauces for years. With a Vitamix you don't need to presoak the cashews at all, I blend mine on high for 5 min so it gets steaming hot- always as smooth as real cream. If you don't have a Vitamix def soak them.

I think it will blend quicker and more smoothly if you don’t add all the liquid at once. Use just enough liquid to keep it moving (lubricate the solid particles). If you add too much “lubricant” at once, all the solid particles are just sloshing around instead of mashing up against each other and breaking up. Use the friction to your advantage.

Unfortunately here in Switzerland Cashew nuts are very expensive - $ 4 for 100g (no organic). Does anyone know if you can use walnuts as well? We have a big walnut tree and nuts in abundance. I loved the idea of this recipe, but had to make so many changes that it hasn't been the best version of itself 😅😅 I hope to achieve such creaminess and a tastier version another time. I mean still, it's quite tasty 😋 If it may help someone: - As cashews are expensive where I live, I tried with almonds, and even though I never tried with cashews, it seems a good substitute. - You reaallly need a good food processor for it to be creamy like Nisha's. Otherwise its still good, but it will ve a bit chunky even with the liquid you put it in. - Vegeta is a great add on (but be careful about the saltiness, or it will be a bit too salty like mine 😆😅)

Haha yes it’s super useful! I got mine at a local kitchen store called whisk years ago. It’s silicone based. I love it because you can replace the tip with other ones so if you want a thick or thin squeeze. Maybe you can find something similar on amazon?

I cook a lot like you and love your videos! I am vegan though primarily for ethical reasons and am sparing of avocados because they are monocrops which disturb the environment rob small farmers of their livelihood and are traded by Mexican cartels. For the same reason I don't eat cashews because they are harvested mostly in Vietnam using child and slave labour. The same can be said of chocolate so I only purchase fair trade chocolate. I use almonds instead of cashews and it's easy to steam off the outer shell. I really don't give a flying f- about grittiness. I cannot afford a $1,000 blender; Ninja high speed has served me well for 10 years and I have been able to look after my dog's vet bills which are much more important.

I make a lemon pepper cashew cream that we love. Your sweet one looks good. I wonder if I can use this a replacement for whipped cream to make a fruit salad. It won't be whipped and it will be different, but it might make my husband happy. He misses his fruit salads. I'm going to try it. It could be good for a lot of desserts. @@RainbowPlantLife I got it from a KZbinr. Can't remember his name. I'll watch for him again so I can credit him. It's basically, water, cashews, lemon, garlic pd, lemon juice, salt and lots of pepper. No nutritional yeast. I thicken it with xanthan gum. That way, I can make it less fatty but still rich and creamy tasting. I put it in 1/2 pt jars and freeze. When I make it I start with 400 gms cashews. It's a falafel dip, but it works like sour cream.
