Mike, love to reverse sear. I have never seen that cut of meat in my local markets. Wish we had better butcher shops locally. I have to ask because that looked awesome on the cutting board!! That chimmichuri looked tasty as well! Great video 👍😁 👍

I have several picanhas in the freezer. You're making me want to thaw one and put it on my offset. I usually cook them on a skewer and slice off parts as they cook but I'm wondering what the smoke flavor from the offset will be like. Thanks for the video!
