We grate cucumbers and let the water drain out a few hours, you can freeze the water and add it to soups. We take the grated cucumber and mix it in plain yogurt adding salt and pepper to taste and sometimes minced peppermint or dill. We also take plain yogurt and mix spinach which has been wilted in a mixture of diced onions browned with tumeric and salt to taste. Depending on how thick you make these you can use as dips or as a side dish with grilled chicken or a grilled meat. My favorite is with Persian "Sweet Rice", Jasmine rice with orange zest and orange juice cooked down into a syrup then mixed with the rice. 😋 You love my roasted green bean recipe, try the yogurts and sweet rice. 😉❤
