Wendy’s chili is made from “leftover burgers”. There is constantly fresh patties being added to the flat top grill to keep up with orders. Whenever it gets slow they cook the burgers fully and put them in the steam cabinet for the next day’s chili. End of the night they go in the walk-in cooler. First thing in the morning the fully cooked “chili meat” burgers are added to a steam table pan with water to warm them up and cook off the excess grease. It’s drained, then chopped, then added to the rest of the chili ingredients and cooked for X amount of time before it’s ready to be served. I don’t know why people think this is weird or gross. It’s a clean, efficient way to make a good product while saving on wasted food cost.

Was coming here to say this. I worked at Wendy's back in the day and we always had to have a certain amount hamburgers left over to make our chili the next day. If we were running behind at the end of the night, we had to cook extra specifically to use in chili the next day.

As a 14 year Vet of Wendy's, it is indeed true that they used unsold burger patties (fresh if we were behind) for chili. I've made countless batches of chili in my day and never had an issue. Food safety is a priority for ALL restaurants and they wouldn't do anything questionable. It was/is an excellent way to control costs and food waste as well!

You are so correct! I think the "oh, gross, leftover burgers!" attitude comes from people whose parents threw away all of the leftovers after a meal -- how wasteful! Either that or else they incorrectly believe tat they are recycling the meat from burgers that have been dressed and served, which would have gotten them shut down decades ago if they did that. I used to work at Wendy's in the 90's and they did use left over burgers, but it wasn't gross at all, it was practical. You had to have a certain amount of burger patties available at all times in the heating tray. If they didn't get sold, they got stored in the fridge over night and ground up for chili the next morning. Sometimes if the burgers sold well, burgers had to be made the night before specifically for chili. The rest of the chili literally came in a bag.

I don’t know when they started freezing them but that’s not how we used to do it. If you ran the grill you’d cook more than you needed for burgers and keep them in a steam pan that was stacked in another steam pan with water to create a mini steam table on the grill. Once you had enough to make chili, we’d chop the meat in a pan and either start a pot of chili or put it in the walk in until ready to start more chili.

One of the interesting things about canned food and drinks is that the anti-corrosive can linings can actually absorb flavors/flavor components from the product. When I was working as a chemist, we tested a very popular drink that rhymes with choca chola with some of our coatings, and the main flavor component (which interestingly was a synthetic citrus compound, not cola flavoring) did get absorbed to varying degrees by all of these coatings. So, it's not only that the can flavors the food, but it 'can' absorb some of the flavor OF the food.

Back in the summer of '94, right after I graduated high school, I got a job working at a Wendy's and I was constructing burgers and cooking up fries. The key to having it fresh was because meat was constantly on the grill, so yes, overcooked meat went into a warming bin and was saved for making the chili. Waste not want not. It's a smart way of reducing food waste and there's absolutely nothing wrong with it.

The buffet that you refer to is actually called the Wendy's Super Bar, and became popular in the mid to late '80s in many Wendy's locations. We installed them in all of our stores. They were popular with the customers and a very good value. The problem was in the execution. They were very difficult to maintain by the staff and the product that we were placing out there really wasn't all that great most of it was stuff that was rehydrated. The spaghetti was decent The tacos were decent The rest of it not so decent. Of course the salad bar that Wendy's used to have was always great.

Hi Larry. This is probably NOT news, but I will fill you in on Wendy's Chili. The chili made in the restaurants is made with leftover hamburgers, but they aren't served to the guests. Hamburgers are staged on the grill based on the volume of customers. If they are not served within a certain amount of time, once cooked (usually 7-10 minutes or less on the grill) they are placed in stainless steel pans in the refrigerators and cooled overnight. The next day, they are boiled in water to remove fat, drained then chopped up to be placed in the daily fresh made chili, The meat is weighed out by count of patties, so the amount of meat per batch of chili made is the same every time. The cook pot for the chili is about 5 gallons, in as double boiler. The chili base used for it use to be Contadina Anglia Mia Chili sauce, tomato juice, prepared spice pack, and frozen diced celery, onion and bell pepper. The chili is simmered for 3 hours then placed into the front chili bin or the drive thru bin. Here's a tip. Don't order Chili from the front (inside ordering) early in the day. Because that is the leftover chili from the night before. New Chili is always placed in the drive thru first, then at the end of the day, the front bin of chili goes to the drive thru. Old and new chili is never combined. The hold time is 48 hours MAX. This may have changed since I worked there. I was an Area Supervisor for 11 Wendy's restaurants in the 80's. I hope this sheds light on whats in the stores. I wont buy the canned stuff, why bother? its cheaper and better at the restaurant. Take care!

I left in 2017 and at that time it was common practice to bag the chili meat and put it in the freezer if we were not using it right away. If I remember right it was 5 days. Any left over chili was carried over to the next day, we used covered ice blocks to cool it down to safe levels.
@adamrk1973

@@Phoenixryu That's all correct except for the fact when I worked for Wendy's in the '80s we did not freeze the unused cooked hamburgers. They were boiled then chopped the next day and used in the chili. And you're correct about the rotation of the chili leftover chili is reheated the next day and placed in the front chili bin. It's only used for one additional day and then it's discarded. We would donate any chili over its holding time to the local food bank food pantry. There was absolutely nothing wrong with it except that it was beyond its sell by for our use because we wanted it to be as fresh as possible. As I said I always recommend buying the chili in the daytime at the drive-thru and in the afternoon or evening at the front counter because of the old chili from the day before is always placed in the front counterbin first 😋

Larry, if the canned stuff is too thick, add water. That's what they do at the restaurant. Add water as it simmers to thin it out. Keeps the profit margin up. Yes the meat comes from the burger patties. The chili base comes in a bag.

The difference in meat content between store and canned is weird. I can’t speak for the canned but I made hundreds of batches of store chili and the recipe was fixed. Weigh the meat, boil it to remove fat, combine with tomato juice, canned tomatoes, beans, and the secret spice pack. When we did not have enough chili meat, the leftover patties used for the chili, we cooked up more for day’s batch. Great video as always!

I will occasionally stop off at Wendy's for a baked potato and cup of chili. I've found that the meat in the chili varies every day, much like the amount of chicken you get in a KFC chicken pot pie.

Wendy’s chili is so tasty, and yes, the beef is from leftover burgers. One of the heartiest meals is Wendy’s chili dumped on a Wendy’s plain baked potato, and if it’s available, adding cheese on top. Without the cheese, it’s only 500 calories.

The Lovely Bride is a fan of Wendy's menu items in general whereas I have yet, after more than fifty years, found anything I liked on their menu enough to order it twice or even choose Wendey's over any of the other fast-food places. The irony is that The Lovely Bride makes a chili w/beans that I have begged her to let me take to market. It's the best damn chili I have ever had and don't get me started on her pulled pork BBQ which has no competition!!!! And she won't let me take that to market either!

Hi Larry! I have enjoyed Wendy's chili. I have never seen it in the grocery store. I would buy it to try out, if my grocery stores carried it. That does seem to be an excessive amount of money for canned chili.

My local grocery store had some Wendy's chili on the clearance rack, I'm guessing because not many people wanted to pay five bucks a can for it. I was tempted to try it, but couldn't bring myself to buy it even at $3, when you can get other good brands of chili on sale for half that.

The canned chili doesn't taste the same as the restaurant chili (more chili powder forward, less of the sweet tomato flavor), but I still found it to be a decent quality canned chili which are often kinda yucky.

Fall is coming up soon can't wait to make crockpot chilli. I have a good size crockpot and I let it cook on slow for a few hours until we can't take it and have to have a bowl of that homemade deliciousness. No matter what anyone says chilli cooked in a crockpot is the best way to have it. As a matter of fact I cook most of my homemade soups in a crockpot. Always got extra to put in freezer containers. As a matter of fact my wife just had the last of the chilli I had made a couple months back.

I agree with you in preferring soupier chili with more vegetables over the cloudy, thick chili you get out of a can. $5 for canned chili is a little bonkers, but you know they can sell it for that because Wendy;s chili has such a great reputation. I think I'll stick with the restaurant chili. Like you, I have mobility issues, and when I can get something in drive thru, that's a bonus. Plus, you can get hot sauce, crackers, sour cream, and diced fresh onions at no additional cost just for asking (grated cheese for 30 cents extra).

I used to love the taco bar at wendy's. They had spaghetti and a white sauce for pasta. And salad very confused but I didn't care that was the only place to get "tacos" in the neighborhood. And all you can eat. The 80s and 90s were strange times. I remember when some kfc's here were all you can eat too. You bought a plate and just went to a very small buffet. This is the country out this way so things were a little weird.

I did this when my wife and I had to hit a church meeting Nuke a pound of ground beef until all the pink is gone. One minute, then flip so it doesn't get dry. Pour off the grease Grind the beef in a food processor Open a can of beans and a can of diced tomatoes and dump in a bowl and mix with the beef. Nuke for another minute or two so the flavors mix. You can use chili beans and/or tomatoes, or tomatoes with lime and cilantro if you want. Or any sort of beans, even pork 'n beans, works for me.
