I soooo agree!!! It sure would be a better world if we all had access to such amazing homegrown meat that only had one bad day on the farm! Have you seen the way they are grown in industrialized facilities?! It’s beyond nasty!!!!🤢 No wonder people are so sick!

I thought you guys moved out there to be a part of the Justin Rhodes sphere of influence. I have no idea why I thought that but I'm glad I found you. I like that you are grounded in your approach to homesteading, and that you keep your farm tidy. That's a BIG deal!!

Turkeys look great. When you mention roasting your turkey in your table top roaster, I knew I couldn’t be the only one. I’ve been using my roaster for a few years now roasting my turkeys. I find they roast up faster and better in the roaster compared to the oven. I’ve also been known to take my turkey straight from the freezer and into the roaster. Half way thru, I’ll get in and pull out the neck and such, and then let it continue to roast. Works out every time. I make and bake stuffing separately, so that is not an issue.

My wife took cheese cloth and soaked it chicken broth and a half stick of melted butter. She put it over the turkey while it was in the over. I was "sure" it would dry out and catch fire... but it didn't. She put more of the broth/butter on it as it cooked. That was probably one of the BEST turkeys I've eaten!

The size of that turkey's legs you were plucking was amazing. I cook turkey in my pressure canner now. I never liked white meat before doing it this way. You can then put it under the broiler to crisp up the skin.

As I watched you move the turkeys, I was reminded of the childhood book “The Great Turkey Walk” by Kathleen Karr. It was set in the 1860’s and the protagonist walked the turkeys over 1000 miles.

With having only 3 or 4 of us here for a Turkey dinner, I usually only cook a 12 pound bird. We get plenty of leftover meat that I will separate and use for Tacos, casseroles, Pot-Pies, Tetrazzini, Sandwiches both hot and cold, and soups. I'll cook down the bones and parts like the neck and wing tips etc for stock and the organs will go to the dog along with any non bone particles strained from the stock. Even a small bird goes a long way! To keep the bird moist when roasting I've always put cut up apples and oranges in the cavity, peels still on. The fruit removes any gamey or bitterness from the dark meat and moistens from the inside out. Stuffing is much safer when cooked outside of the bird and having a big empty center will make the bird taste dry. I have even used the apple cores from the apples I used for the pie. Nobody has ever said that I made a dry or bad tasting bird. One of many tricks I learned from my Grandparents.

Those are some nice looking turkey's. In my next life I want to herd turkey's. 😅 All the homesteaders I watch seem to enjoy raising them. And tasting amazing for the win. I ate wild turkey when I lived in Iowa. That was tasty. I did like birds cooked in my roasting oven the best. And what exactly were cornish game hens? Haven't seen them in forever
