That number of dishes on one menu would be a daunting thing to try to deal with no matter who you are. Unless you had two-dozen cooks on the line and perhaps two or three chefs to even come close to pulling that off. Also, people saying "he doesn't know what he's talking about because he's British," are just being ignorant. First off, he's a Scottish dude, no British. Same Island, very different country indeed. Secondly, these owners are FAILING at what they're doing. Gordon might have had his rough patches and had to close a restaurant or two through his entire career, but he's world famous for food (and swearing at people), and you're clearly not. Otherwise you wouldn't need Gordon there.

I've watched 15 of these recaps in a row and every single one went out of business 6 months to 2 years after Gordon left. You can rehab a restaurant but people are much harder to fix.

No matter how much of a good cook they think they are you have to have fresh ingredients in order to serve good food, otherwise you’ll not only lose money, but you’ll lose/waste food as well. You gotta have fresh ingredients, a clean kitchen, and a clean restaurant otherwise decor or interior design won’t matter if you don’t all three covered.
