I saw my MD yesterday... He said, "Other than the meds we've been prescribing, you're an anomoly. Most people in your situation are long gone." I smiled and replied "Being an SOS Vegan is the answer." He didn't understand and didn't seem interested (which IS THE PROBLEM!) I'm 66 now. I had a quintuple (5) heart bypass at 38. My Dad died at 40, Mom at 50, and my Grandpa at 52. I'm the last, and now the LONGEST-living male on my Paternal side. Why Doesn't the Medical Field understand this!!!? Oh HECK, I forgot! This recipe for Charro Beans and Pico reminds me of my young years in Imperial Valley, California (minus all the meat and crap). These are SO DELICIOUS and way healthier! If you don't have a pressure cooker/instapot, it's easy to soak the beans for 12-24 hours, changing the water 2-3 times (reduces gas). Bring to a boil, then reduce the heat to just simmer them. Normally this takes 2 hours for 2c dried beans, but if you add 1 tsp salt and 1/2 tsp baking soda, it reduces cooking time by about half (it's a little foamy at first) and it reduces gas. Use some now and freeze the rest in mason jars. Also, mashing the beans is great for some dishes, and you wind up eating more beans that way.

I find that salt (as well as anything acidic) prevents beans from softening well. I think it's vital to soak beans before cooking (vegetarian since '72, vegan not long thereafter), even when using a pressure cooker...overnite in cold water on counter. They can be soaked, then rinsed, then frozen in cooking size batches. Then they're ready to cook. I do this with chick peas (for making falafel/you don't cook them in advance) and for kidneys when making Minestrone soup (in the IP). That soup cooks in zero or one minute, then release pressure. You can even add the pasta to the pot, but we prefer the pasta cooked otherwise. So delicious & lasts 2 ppl several meals, esp if you add cornbread (make waffles from your batter/freeze them) or leftover biscuits, etc. I use a lot of kidney beans in it (cook in the IP one hour after soaking, & cook till it makes a thick gravy; makes the soup so much better). No, I don't dry the beans. The more you eat beans, the less they will bother you, concerning "gas". It's a fact of the human condition & some of our food combinations, too. But it doesn't have to be a problem.

When ready to use the frozen beans, you can thaw them at room temp (if home is warm, be cautious not to let them sit too long & sour) or in frig (less time), but I generally will just pour boiling water over them, let sit a few mins, then drain: ready to use.

We have a similar traditional bean recipe in Greece which uses the same ingredients plus carrots and red pepper flakes instead of jalapeno peppers (because we cannot find them here). OMG you are my spirit animal!!! I went vegan in 2018 and thinking first what tastes did I like helped to zero in on what I wanted to eat. Fast forward to today and I use my instant pot (for about the past 4 years) to prep my dry beans (6 C water, salt, Mex chili powder or hot chili powder and chili powder - yes, 2 kinds) so I can use them in whatever recipe I choose. The only beans I don't quick soak are my black beans but since I love this taste, all beans get prepped the same and portioned onto containers to deep freeze. Never cooked a complete meal before (in the Instant pot) so I will be doing yours in the next couple of hours after work. It looks devine!! Thanks for sharing. (Just looked at your shirts and thought of another - "Did I Pico your interest?" or something like that 😉)

Love it... My favorite breakfast is a "haystack" which is basically a "taco salad" you start with the chips and each ingredient is stacked on top of each other... Add your beans, lettuce, onion, tomato and avocado and whatever else you might think that would be good, then put on some green taco sauce.. Boom!!! go enjoy. This breakfast fills you up and keeps you full for a good while..

I've been making this for a few decades or so and sometimes I"ll add a little corn or sometimes mushrooms for a "meaty" texture, sometimes some potatoes, the sky's the limit. I do use the saute feature though and simply turn it one while I'm getting my ingredients out and then as I chop the onions, they go in, the peppers, etc. and when I'm done chopping they're partially sautéed and if I want I can continue for a few minutes or just add everything else. Also, for those whose tummy's don't like unsoaked beans, put them on the stove, boil for a minute or two, let them sit for about an hour, rinse and voila, your tummy will be happy. I have to add that this made a huge amount. I froze a bunch of one cup containers of these, and they have come in handy so many times when I didn't feel up to cooking. We just got back from an overseas trip and were terribly jet lagged. My husband was amazed at the different delicious meals I put together for us so quickly using these beans as a base.

The grocery stores near me sell frozen organic peppers and onions. It was on sale this week 2 for $4. My friend and I talked and both of us tend to end up buying fresh vegetables and then come home exhausted, late from work and we end up having our produce go bad. Both of us buy frozen pre-prepped veggies because of that. It really helps. And, nutritionally, they can have more nutrients than fresh veggies (unless the fresh veggies were just picked)

@@wishingb5859 I started doing that a few years ago too because I'd found that I was wasting a lot of money because I was not consuming my fresh produce fast enough. It would spoil. So now I purchase quite a bit of my veggies, and even some fruit (e.g. wild blueberries, pineapples, mangos, etc) frozen. People really underestimate frozen produce by thinking it's inferior, but it's not. Also, the bonus is that frozen produce is less expensive than fresh produce. 😊

@@WellYourWorld but don't miss out on produce sales, such as onion & peppers, when you have time to "mess with them". Broccoli & such must be blanched to last any time at all but onions & peppers which most of us use daily/often, can be cut up without blanching before freezing. If you can get 4 large green peppers for $2, it's worth the time to cut & freeze in snack size bags. Put all the loose bags in leftover plastic (cereal bags work well) & label it, and mark in your mind "where in the freezer" you've placed it (lol, senior moments).

Sometimes at the end of the day I feel sick of beans and lentils because I am full. The next day when hunger builds again, I find them appealing again. This is how it is supposed to works. Unlike when I ate processed food and never felt full for more than 10 minutes.

I love how you keep it simple AND delicious 😋. I do recommend folks soak their beans if they can remember to - I've tried both ways and my gut has a much easier go of it with the presoaked method. Not required, just suggested. Love to the whole fam 💕!

I’ve been eating plant based now 2 weeks ! I gave up my love for eggs. I just had A/ fib 2 weeks ago. And I take thyroid meds .so I really want to eat healthier! Looking forward to making this. What do Americans mean by a can of tomato sauce? Is that simply tomato puree or passata? In Australia tomato sauce is what you put on your cooked meal ie Heinz Ketchup.

I love your videos! I just became a vegan a while ago and I just made your salsa that I been paying for at the store for a long time and wasted lot of money!! And the beans are soooo good! My girlfriend that I am with isn’t vegan and she don’t like beans! The 2 pounds I made will last a lifetime! Next time I will cut it in half and the recipe! Just got the instant pot and I don’t know why it took me so long for getting one! Can I put half the batch in mason jars and put them in the freezer? What’s the best way to freeze?

While we do not freeze recipes, we have heard that this recipe freezes well. You can use mason jars or any other containers that are freezer-safe!

Soak beans overnight, it will take longer. Probably 5-6 hours.
