October 2022 I weighed 190 lbs, got off all my medications with guidance from my doctor and had the best blood test results ever. I bought two different bacons at Sprouts, and fixed one on Friday when my granddaughters were visiting. I fried the entire pound and tossed the wrapper; before realizing how great this bacon is. Later I had a cold slice from the fridge and realized that THIS is the bacon of my dreams; more salty and smoky than sweet and I have NO IDEA what it was. I have the other package of a different one to cook up but I am mourning that I tossed both the wrapper and the receipt before saving this bacon to my weekly must haves.

I can't always tell a lot of difference in bacon either but when you look at the pan when it sticks you know that there are sugars. In a kitchen I used to work in, we would make our own "lamb bacon". We would get the loin and tenderloin with the bone still on. We would sell a 7oz loin and then take the tenderloin which is pretty small on a lamb, and wrap it in the fat cap and tie off with butchers twine. Kind of like a simple roulade. We would cure that in a sugar/salt mixture for a couple days, and then slice it thin and render it down until the meat was crispy. So tasty, but labor intensive. It was the garnish for the lamb loin.

The reason that you are burnt out on pork rinks is because you buy the kind they have in those bags in your grocery store. A real Mexican food store ( mercado ) with a deli counter, you might find real chicharone carne. With the meat and juicy fat layers all in tack. Not just the snack ( botonero) style. The ‘carne’ style. Fresh from the vat. Cooked in real pork lard. It hard to find these in the states but worth finding. Yum.

One of my favorite meals is beef stroganoff. I saute beef, add a few sliced mushrooms, then a little beef bouillon and simmer. Then I stir in sour cream

Keeping it real … thank you for not shaking. I love Steakums with the baby bell peppers… probably the easiest meal item to keep on hand especially if you cook for one.

Like the particular keto/carnivore treats that actually crunch and wrap things, but she said something needing to be noticed specifically: that while talking about her choice to eat organic, patstured, grass-fed etc, she actually got to where she is in her health by eating cheap Walmart meat. So don't think you can't start on this keto journey because you don't think you can afford to go to the full cadillac-grade food. Oh, and watch to the end, because you get to meet her baby kitten.

FYI: “Doctor” Berg is only a Chiropractor and his information is NOT accurate. He’s also a high-level Scientologist. Don’t believe anything that quack says. Dr. Kenneth Berry is the only true authority.

Lamb is so good. We eat it every week also. There is a Greek place near us that serves roasted lamb shanks. We also cook lamb burgers, chops, boneless chops, and steaks at home.

You do have to watch Walmart now, they are curing it with sugar. I had to go back to Carolina Pride.
