okay okay okay here’s the recipe i promised, in my boyfriend’s words 😭 Hi, Brandon here - Roisin has been badgering me for the below lmao Hope you enjoy! Prep all of the below so it’s all to hand and accessible 400g of ur finest pasta (we used rigatoni) 2 tbsp of whatever oil you have (we used olive oil) 2 tins of chopped tomatoes 1 large red onion Sea salt and fresh cracked black Pep(per) 1 tsp oregano 1 tsp thyme 1 tsp basil 3 cloves of garlic - micro-planed or finely chopped 2 tbsp tomato purée 120ml double cream Ball of Mozzarella Cheddar cheese (enough to cover the dish you are using) Aight so boom Start by preheating your oven to 200c Pasta: Boil a large pot of water, add salt to the boiling water and stir Cook pasta per the instructions on the packet but for 2 minutes less While your pasta is cooking, start on the sauce This is to allow for carry over cooking and baking When pasta is ready, drain the water but retain around 300ml of the pasta water Sauce: - please taste this while it is cooking, add and adjust seasonings as you see fit, this is important Set your heat to a medium low Add 2 tbsp of oil to your sauté pan (if you don’t have one, a big high walled frying pan or deep saucepan works also) Once the oil can spread quickly and is shimmering, add your onion When the onion is starting to sweat and turn translucent (google “sweating an onion” if you need to, doesn’t sound real lmao) Add the garlic, fry off until fragrant Add the tomato purée and oregano, thyme, basil Ensure the tomato purée is incorporated with your onion and seasoning Fry off the tomato purée until it caramelises but does not burn, this should take around 2-3 minutes Add the tins of chopped tomato and mix well, and then add the heavy cream Add in your pasta water to emulsify the sauce, Bring this to a nice bubble, and keep stirring to incorporate Take your time to reduce the sauce to your desired consistency - it should ideally stick to the back of a spoon Combining into your casserole dish: Add the full mix to the dish, top with your mozarella, cheddar cheese and basil/parsley breadcrumbs are optional, we typically don’t with this recipe Bake in oven until golden on top - around 20-25 minutes Remove from oven, allow to stand for a few minutes Plate up, serve and enjoy!

youre a living reminder to me that life does get better even when youre struggling. i love to compare my feelings to weather and remind myself that the guilt will pass like a storm and soon the sun will shine, but you’ll never be able to appreciate it if all you can see is the time when the storm was raging. tysm for being you ro and we love u sooooo much

Your channel brings a refreshing maturity to a topic which is often clouded by diet culture/ those who are still disordered. It has been genuinely wonderful to watch you grow on KZbin from a quiet, scared girl who was consumed by anorexia, to the intelligent and insightful young woman you are today. I have struggled with eating disorder most of my life I'm 56 there was no treatment when I was in my teens. I started restricting food recently due to things that were going on in my life I couldn't control so I went back to controlling food your videos have been life saving for me. I never got treatment but watching you has been like therapy. I have now started eating more again and I feel so much better, I do feel guilt when eating but your content helps me deal with this I don't want to go back to the gell that is anorexia again. I love watching you get stronger and healthier.

Me 2 i am just turned 48 and have suffered disordered eating from age of 23 so comforting to know that I am not the only adult with this . I don't know if you feel this but I find people think because we r older and I have 3 teenage daughters that I should grow up and have more sense but it's not that simple is it ?? @@paulamartin6049 hi I agree with you, my eating disorder started 16yrs of age I have gone through periods of managing it but have never had proper treatment. I hit menopause and gained some weight this was a trigger for me because like in adolescence my body seemed out of my control. People commented on my weight gain and I started restricting again until weight loss began again. This illness can stay with you, especially if you never got proper help, this young ladies posts are so helpful. Maybe need someone to post who has suffered disordered eating and is older. @@teresaquail3503 posting wouldn't be my jam but I agree that a post from a more nature sufferer would be so helpful and I know I would be keen to watch maybe it's something you could think of doing if that's your thing ??? I feel like a really silly superficial little girl having this disorder especially when there ate people out there in todays economic crisis who cant afford the basics and r really struggling and have no control over their families circumstances. It is so frustrating and I just hope that someday I am free from it and can eventually kick it's ass. I have been in and out of treatment sooo much over the years and yes I think it's ingrained in your personality and when life gets tough you resort back to it as its you go to coping mechanism. What is more unbelievable in my case is that I am a psychiatrist who has not been able to cure myself how pathetic is that ???? Px

sometimes my brain triggers me like "u will feel worse, it wont worth it just give up." I feel so ashamed and uncomfy with myself and my body. But then im looking u Ro, looking the things u have done and just in the end, u look more beautiful and happier than the past. Its motivating me a lot. Thank you for always being there for us

You are The most beautiful soul i have ever seen. I am so glad that you were there for me through my recovery. I am finally at the stage where i can say i have recovered because i accept my body and fuel it without guilt and hesitation. Lately i have started exercising again as well but this time because i enjoy it and see it as a connection between by soul and body. Love you Ro 🥰

I just found you and have been watching some of your old videos. I can't tell you how happy it makes me to see the casual way that you eat now, in comparison to your videos from a year or more ago where every bite was a challenge. I just want to go through the camera and tell Ro from a year ago that she is right when she tells herself to keep going despite the fear it will get better. I've never been so proud of someone I've never met.

I've always watched your videos but I've never commented, I've also never suffered from a eating disorder and I STILL find your videos so comforting to watch! I have suffered from addiction though and the similarities between addiction and eating disorders are crazy, the will power you need for recovery from both mental illnesses is insane but you're doing great and I love seeing you thriving! I just thought I would let you know even us who don't know the struggles of ED still watch your videos :) You're honestly such an angel and it's the most heartwarming thing to see you doing so well in your recovery 💓💓💓

@@RoMitchell ❤️ I only speak the truth. Speculoos is my favorite 'Misfits bar'. Shame people are now having to justify why they are eating protein bars, especially in the recovery community, just because it became a "thing " at one stage. Omg one day it's acceptable the next it's criticised, just like every other food EVER! Don't feel like you have to justify your food choices because you will be forever justifying yourself. If others have an issue with it, it's their problem!

just wanted to say that I am beyond grateful for your videos. Right now i am really struggling with anorexia a lot and I made it a habit to watch and rewatch your videos whenever I feel guilty or panicked. It really helps a lot seeing so many people in this comment section alone who are thriving after making their peace with food. I want to reach that point as well. And I am willing to go through it all.

I feel as though I'm stuck in recovery. I'm not going backwards but not exactly moving forward either. I still go back to old safe foods when I know deep down I don't like them, and still compensate. Just wondered if you had any tips to keep on going forward? ❤ xxx

i know how it feels to get stuck, it’s an uncomfortable place. my advice would honestly be to remind yourself that safe foods only feel safe because of your eating disorder, and you can’t live your life being ruled by a fear of food, or equally an eating disorder. you haven’t come this far to only go this far. there’s a life waiting for you. i know it’s painful and hard but there is so more to life than this. sending love xxxx

I’m the exact same, so what I have done is write down all my fear foods and fold each one up and put them all in a jar and each day I take one out and have to do it! No matter what else I have or will have that day! It’s so scary but it’s allowing me to make that start I need!

Just found your channel while in a gut healing journey with gastroparesis and learning to eat solids for my second year I realized that I needed to increase my intake by a lot and struggled to find content that wasn’t health obsessed. @@mae5560 actually had tubes out for two years now and I am really grateful to channels like this for helping me find and retrain my gut. It’s actually been a little over a year since I’ve had a huge episode but the delayed emptying is still about the same. I just didn’t want lose anymore function of my stomach so I had to learn how to eat again. 💕

I am so proud of you wow you are such a beautiful woman. I‘ve just seen one of the Videos from last year, and you challanged yourself to break your food rules. I never thought of my little „habits“ that way and just wondered ehy i started sweating or even fighting with my family to just get out of the situation and leave. I am trying to recover myself and seeing you is just such a huge inspiration. Thank you for posting these videos

I was a bit underweight. My husband cooks and I gained like 10lbs right away. Eating is a blessing for sure. You make me smile in these cute videos. Your message is complete.... Eat what you want there are no rules. God bless ❤️

I just saw a video from a year ago where you were in full recovery and seeing how much you have changed especially mentally made my heart smile. this made me so happy. the fact that someone placed a bite on your plate and you didn't even react made me feel okay. i still get angry at my dad when he tries to do this and feel so bad, but this showed me that one day, i won't feel that. thank u for this :')

Thank you so much for your Videos honestly, you help me so much to feel more understood and less alone. I'm still more or less at the beginning of my recovery but its so empowering for me to watch you get this far. Eventhough I'm still really scared and get the guilt (sadly) and also sometimes feel like I will never fully recover since I often feel so lost bc I dont really have 'guide lines' for Orientation. Still trying to better myself in that aspect and your Videos are so supporting:)

you look so pretty and i really like the way you talk and think. you are such a young girl but you have a behaviour and manners of an experienced person. i'm happy for you and i'm actually on my way to being happy myself, as i'm in recovery right now and your videos are helping me a lot. sometimes they even make me cry for the realization of what i'm doing with my life. such a calm atmosphere and your sincere smile motivate me to recover much more than the ED-stories on YT. thanks a lot for your work and please don't quit!!!

Can I just say thank you so so much for posting these vids and for all the posts you do of what you eat on insta - I’m struggling so much right now but when I’m having one of my moments I go to your feed and scroll through pics and videos and you help me see I can eat foods like oils and bread with pasta, and have snacks when I’m hungry! Xxx
