I love the energy of your videos, been on a bit of a watching spree and it's currently 4 AM here. You seem like a sweet little family. My dream is that one day my husband will also be HFPB (and he sure needs it, poor thing, he can stand to lose 40-45 kg/90-100 lbs, and he's already on blood pressure medication at 30 years old). He always eats vegan with me but you're giving me inspiration to take things more into my own hands in trying to get him more used to that way of eating (I've always been careful not to make him feel like he's being forced to eat one way or another, as that can be alienating).

We love making crunchy peanut butter filled dates dipped in dark chocolate at our house! They taste just like snickers! We call them Shmickers! Add a little sea salt on top and OH EM GEE!!

We camp in an RV and I enjoy cooking with my Instantpot. I actually bring my 3 quart and 6 Quart. I also have a portable induction cooktop which is so much better than the propane stove in our RV.

That looked like an awesome trip. I know you are a vegan food channel, but I am a fellow RV'er, and would have loved to see more of the RV end of this trip. RV's are great for the vegan community because we can bring our food with us and still have a great time. Also, I love dates, I would love to try that trick, but I am trying to stay very low fat and lose a few pounds. Maybe someday.

You succeeded in your challenge and made some interesting food as always I have never mixed faro and rice I tend to do them separately As in separate meals on different days I usually do my whole grain rice for fifteen minutes With 1.25 cups of water per cup of rice and do a natural release. Perhaps doing grains might be a theme for a future video. So the next challenge is going away for longer Where you have to shop and prep on site I assume you had mains electricity provided too.

How did the Forester do toeing the scamp loaded up? We’re looking into a new suv and wanted to do forester but it seems the towing capacity was shockingly low? Like 1500-2000 lbs. was there any special trailer hitch you had to use or anything?

It did really well pulling the scamp! However the scamp only weights 1100 pounds which was one of the reasons we decided on it.
