Wow Mimi, loved all the recipes!! I used to make my rice the same way you do, but I would also add smashed garlic and fry it a little bit before adding the rice. It would taste really good! Loved all the other recipes! But I'm a little curious. I always thought you were vegan and saw you cooking and eating shrimp. Did you change your diet? I tried your julienne pepper and mango salad recipe but with a few modifications: thai basil instead of cilantro, salted honey toasted sunflower seeds and a tiny drizzle of honey OR maple syrup in the dressing (I'm talking less than half a teaspoon) and it really elevated the dish! Highly recommended.

Well, I'm not a hater, but heating olive oil is a big mistake. It has a very low smoke point. So, not healthy at all. Olive oil is best used in salads as a dressing or sth. Btw you have a nice family :)

Mango salad recipe at 5.35 For d salad, slice green, yellow, red peppers, cucumbers and 2 mangoes into THIN STRIPS, mix it in wid roasted cashews and cilantro and keep it aside. For the dressing, add Tamari sauce, grated ginger and lemon juice to olive oil Now pour d dressing onto d salad, add salt as reqd and enjoy😊😊 I really enjoyed dis salad and so wanted 2 giv dis recipe a shoutout.
