Hi!!! Been following you for a while and I love your content :) For the vegan gnocchi, my grandma from southern Europe makes gnocchi all the time, and where she's from it's actually traditionally made without eggs - so unintentionally vegan ^^ It's basically 2 parts flour to 1 part potatoes. Boil the potato until it's cooked through and mash in a bowl. Add the flour and some salt and shape the dough. I love to add some dried herbs at this stage as well. Then you shape them into tiny pieces, literally like the tip of your pinky finger, not thicker (they won't cook properly otherwise) and boil in batches - don't overcrowd the pot! Fill the pot with water, and when you add the gnocchi, you'll know they're ready when they come up to the surface and float :) Then you drain the water and fry them in a pan to get some nice surface and chew. I highly recommend frying in some vegan butter/olive oil and adding some fresh sage leaves + garlic

from how I hear it pronounced where I live, basmati is pronounced with an ‘ah’ sound for the a’s so you’re pretty much correct! I’m from southeast asia & quite a lot of Indians live here so it probably is right lol

Have you tried using a mixture of mashed chickpeas, chickpea flour and perhaps soy milk (plus all the spices of course) for your chickpea scramble - the chickpeas add texture and then the chickpea flour and milk add the creaminess

1:48 Where I live we make a dish very similar to gnocchi and some people use potato starch as opposed to flour! And guessing from its nature, you could also use tapioca flour instead :) Maybe with combination with some chickpea or oat flour?

5:22 Maybe you should actually use soaked chickpeas instead of cooked? I remember Sauce Stache making a vegan scramble out of mung beans this way (JUST Egg copycat) and it worked really nice!

No way! The other day I experimented with making vegan spinach and ricotta cannelloni, but for the vegan riccota I used the leftover 'pulp' from making homemade soy milk. It tasted really good actually! It has the perfect texture! (I'm posting the recipe on my account Rachels Healthy eats soon) :)

Hey, these look really good. I just find it concerning that there were quite a few meals that didn't really have any major sources of iron or zinc, until the last few days (chickpeas, beans, chia, spinach). Caffeine can also deplete/block iron and zinc absorption - something to look out for, so good not to drink with/around a meal with iron in it. I know you usually eat more legumes/pulses (going by some of your other vids), but i really would suggest adding chia to your smoothies/cereals, and pumpkin seeds to savoury and sweet foods as a topping to be safe. Beta carotene, alium and vitamin C foods increase the absorption. Another tip would be to use iodised salt, kelp granules or eat seaweed a few times a week (or supplement if u cant be bothered). I can't seem to find videos where you consume much iodine, so I just wanted to warn you. It is as essential as B12, and most people, especially non-meat eaters don't realise this! Hope ur good x
